I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

One Pot Chicken and Hilopites

One pot Greek comfort food. Just a down-to-earth satisfying meal.

Ingredients:
8 or 9 chicken drumsticks
1 onion, diced
2/3 cup olive oil
28 oz can diced canned tomatoes, or if you prefer a smoother sauce use passata
1 tbsp tomato paste
5 whole cloves
1 small cinnamon stick
6 1/2 cups chicken broth or water
salt and pepper to taste
2 1/2 cups dry hilopites pasta
crumbled feta to serve
 
In a large skillet heat olive oil to medium and, working in batches, lightly brown chicken on each side 3 minutes. Remove to a plate. Also remove about 1/2 cup olive oil and save for another use in fridge. Using a piece of cheesecloth or a coffee filter, tie the cloves and cinnamon stick into a bundle and secure with a piece of kitchen twine. In same pot add the onion and cook 2-3 minutes to soften. Then add the tomato paste, canned tomatoes, cloves/cinnamon pouch, broth, salt and pepper and mix together. Bring to a boil, return the chicken to the pot then reduce heat and simmer 50 minutes. Remove chicken and keep warm. Finally add the hilopites and cook 4-5 minutes, stirring occasionally, until most of the liquid is absorbed. Spoon pasta onto the plates topped with chicken and crumbled feta. Serves 6
