I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Sheet Pan Sesame Chicken and Vegetables

Loads of veggies and chicken in a sweet and savory sauce.

This crave worthy takeout fake out meal easily comes together in 30 minutes!


Ingredients:
1 lb boneless, skinless chicken breast, cut in 1 1/2" cubes
2 cups broccoli florets
1/2 cup diced sweet pepper
1 cup mixed frozen vegetables, thawed (carrot, yellow and green beans)
3 large mushrooms, sliced thick
salt and pepper to taste
sesame seeds

Sauce:
1/4 cup sodium reduced soya sauce
2 tbsps sweet chili sauce
1 tbsp honey
2 tsps minced garlic
1 tsp fresh minced ginger
1/4 tsp sesame oil

To make the sauce combine all the ingredients in a small saucepan. Bring to a boil then simmer to thicken, then remove from heat. (Note: may be doubled for a more saucy result)


In a large bowl toss the prepared vegetables and chicken with 1/2 the sauce.


Then spread out on an oiled baking sheet. Add salt and pepper if you like but it's not necessary.


Bake in a 400°F oven for 20 minutes, stirring/flipping once after 10 minutes.


Serve over your favourite rice or noodles and drizzle with remaining sauce. Add a sprinkle of sesame seeds.
