I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Rice and Italian Sausage

You can customize this versatile rice and sausage dish using any sausage you like. Change up the rice and red pepper too. It's a whatever's-in-your-fridge kind of one pot meal!


Ingredients:
6 medium sized Italian sausages (375 g)
1 tbsp olive oil
1 sweet red pepper, diced
1 cup long grain rice
3 1/4 cups beef broth
1 1/2 tbsps fresh chopped chives
3 tbsps fresh chopped parsley
2 tbsps mixed seeds (optional)
salt and pepper to taste

Heat the oil in a large skillet. Cut the sausages in 1 - 1 1/2" slices and add to the skillet. Brown until just cooked through then add the red pepper and cook 3-4 minutes. Add the beef broth and bring to a boil then add the rice, and seeds if using. I had a mix of flaxseed, chia and hemp.

Bring back to a boil, then reduce heat, cover and simmer for 15 minutes or until rice is tender. Add most of the chives and parsley and add salt and pepper to taste.

Serve with the rest of the chives and parsley.
