I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Goat Cheese, Bacon and Date Dip

Sweet dates and honey, salty bacon and creamy, whipped goat cheese! The perfect bite to satisfy any craving!


Ingredients:
5 oz creamy goat cheese, at room temperature
2 oz cream cheese, at room temperature
1 tbsp olive oil
sea salt to taste
1 tsp finely chopped chives
chopped roasted pistachios to garnish
3-4 slices bacon, chopped
1 tbsp fresh chopped rosemary
1/2 tsp brown sugar
2 1/2 tbsps honey
2 pinches cayenne pepper
6 or 7 dates, soaked in hot water then drained and chopped

First, combine the goat cheese, cream cheese, olive oil and salt in a food processor until smooth. Add the chives and spoon into a serving dish. This may be done up to 2 days ahead of time.
In a small bowl combine 2 tbsps honey, 1/2 tbsp rosemary, pinch of cayenne and pinch of salt.
On a baking sheet lined with parchment toss together the bacon, 1/2 tbsp rosemary, brown sugar, 1/2 tbsp honey and a pinch of cayenne. Add the dates around then pop into a 400°F oven for 8-10 minutes or until the bacon is crispy. Or finish it off with the broiler if you get impatient like me. Toss a couple of times during cooking.

Spoon the hot bacon and date mix over the cheese in the serving dish, sprinkle with pistachios then drizzle the honey all over.

Serve with crackers or baguette as part of your next snack tray!
