I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Air Fryer Frozen Saucy Shrimp

Just grab some shrimp straight from the freezer into the air fryer. Perfect buttery garlic and lemon sauce with a hint of Dijon and tender shrimp in literally minutes!

Ingredients:

 1/3 lb (160g) frozen shrimp, size 51/70

1 1/2 tbsps butter

1 tsp minced garlic

1/2 tsp Dijon mustard

1 1/2 tsps lemon juice

salt and pepper (or Old Bay seasoning) to taste

chopped young chives to serve

In a small saucepan, melt the butter and add the garlic for 1-2 minutes then stir in the Dijon, lemon juice, salt and pepper. Place frozen shrimp in the air fryer basket and cook at 375°F for 6 minutes. If you use larger shrimp than the 51/70 I used you may need to cook longer but go in increments of 30 seconds to 1 minute. You don't want to overcook your shrimp. Toss the cooked shrimp with the sauce and serve with chopped chives. Delicious! Serves 1

Saucy Shrimp Chop Suey

This classic stir fry is quick and easy with juicy, plump shrimp. So saucy you could serve it over rice or noodles. Great busy night dinner!

Ingredients:

2 tbsps vegetable oil

300 g (3/4 lb) shrimp

1 onion, sliced thinly

1 carrot, sliced thinly

1/2 large red bell pepper, sliced thinly

3 large radishes, sliced thinly

3 cups bean sprouts

1 tbsp chopped chives

1 cup chicken broth

2 tbsps hoisin sauce

1 tbsp oyster sauce

2 tbsps soy sauce

1 tbsp grated ginger

2 tsps minced garlic

1 tsp sesame oil

pinch red pepper flakes

1 tbsp cornstarch

black sesame seeds to garnish

Mix the broth, hoisin sauce, oyster sauce, soy sauce, ginger, garlic, sesame oil and red pepper flakes together and set aside. Heat the vegetable oil in a wok to medium high and add the onion, carrot, bell pepper, radishes and chives. Stir fry 5 minutes. Make a well in the center and add the shrimp. Once turning opaque on one side flip and add the bean sprouts. Cook another 3 minutes. Whisk the cornstarch into the sauce and pour into the wok. Mix together and heat through for about 1 minute to thicken. Serve garnished with sesame seeds. Serves 2

Shrimp and Veggie Pappardelle

Wide pappardelle egg noodles, plump shrimp and a variety of vegetables come together for a quick and light meal.

Ingredients:

7 oz shrimp

2 tbsps olive oil

salt and pepper to taste

2 tbsps olive oil

1 tsp garlic powder

1 red bell pepper, cut in strips

1 red onion, sliced

1 small carrot, finely julienned

2 cups mushrooms, sliced

1 tsp oregano

1/2 tsp basil

1/2 tsp chicken bouillon powder

1/2 cup water

1 tbsp butter

1 tbsp lemon juice

zest of 1/2 a lemon

2-3 oz pappardelle pasta (2 nests)

Cook the pappardelle as directed on the package, usually 7-9 minutes. Reserve 1/2 cup pasta water then drain. Toss with a little olive oil and set aside. Heat 2 tbsps olive oil to medium in a skillet, season shrimp with salt and pepper and cook 4-5 minutes flipping over halfway through. Remove from pan and keep warm. In the same skillet add 2 more tbsps olive oil and add the bell pepper, onion, carrot and mushrooms along with the garlic powder, oregano and basil. Sauté 4-5 minutes until tender crisp. Mix bouillon powder and water together and add to the pan. Simmer uncovered to reduce liquid by about half. Add butter and return the shrimp and the pappardelle to the pan.  Toss together heating through. Add lemon juice and zest and some pasta water if necessary. Serves 2

One Pan Shrimp Orzo

This one pot meal is a comforting mix of juicy shrimp with orzo in a creamy sauce along with spinach and sun dried tomatoes. Another 30 minute beauty!

Ingredients:

1 lb shrimp, 36/56 count

1 tsp smoked paprika

1/2 tsp oregano

1/4 tsp basil

salt and pepper to taste

1 1/2 tbsps minced garlic

2 tbsps olive oil

Orzo:

1 tbsp olive oil

1/3 cup chopped sun dried tomatoes

1 cup uncooked orzo

2 cups chicken broth

4 oz spinach (or spring mixed greens)

1 cup cream (heavy or 10% with 1 tsp cornstarch)

salt and pepper to taste

Season the shrimp with smoked paprika, oregano, basil, salt and pepper. Heat 2 tbsps olive oil to medium high in a large skillet. Add shrimp and garlic and cook 2 minutes. (May need to work in batches so as not to steam the shrimp). Remove from pan and set aside. In the same pan add 1 tbsp olive oil, sun dried tomatoes and orzo. Toast on medium high heat for 2 minutes then add the broth. Bring to a boil then reduce heat and simmer 5-10 minutes or until orzo is cooked. Add spinach and cream and return the shrimp to the pan. Simmer 2 minutes to warm through. Season with salt and pepper. Serves 4

Rigatoni Shrimp Florentine

This delicious shrimp florentine pasta doesn't use heavy cream so it's a much lighter version of the classic dish.

Ingredients:

8 oz rigatoni pasta

1 tbsp olive oil

1 tbsp butter

12 oz shrimp

2 tbsps finely diced onion

1 tsp dry basil

2 tsps dry parsley

2.5 oz chicken broth

1 cup tomato sauce

4.5 oz baby spinach leaves

1 cup 10% cream

1/3 cup parmesan cheese

salt and pepper to taste

2 tsps cornstarch

2 tsps water

Cook the rigatoni to al dente then drain. While the pasta cooks heat olive oil and butter to medium heat in a large skillet and cook the onion for 2 minutes. Then add the shrimp, basil and parsley cooking 2-3 minutes, flipping shrimp halfway through. Add the broth and spinach and cook 2 minutes before adding the tomato sauce and cream. Whisk the cornstarch and water together then whisk into the pan and cook 2-3 minutes to slightly thicken. Finally add the pasta to the skillet, toss to coat with sauce and add the parmesan, salt and pepper. Heat through 3-4 minutes. Serves 2-3

Lemon Garlic Shrimp and Zucchini Noodles

Lemony and delicious shrimp with an array of vegetables makeup this healthy dish. Served here with basamati broccoli rice. 

Ingredients:

1 1/2 tbsps butter

1 1/2 tbsps olive oil

1/4 cup chopped onion

1 bell pepper, cut in strips 

2 tbsps minced garlic

1 tbsp olive oil

1 1/2 lbs raw shrimp (I used 16/20 size)

1 tsp salt

1/2 tsp red pepper flakes

1/4 tsp pepper

1/2 cup chicken broth or white wine

1/4 cup lemon juice

1/2 lb zucchini noodles

1 tsp dry oregano

parmesan cheese to serve 

In a large skillet heat butter and 1 1/2 tbsps olive oil to medium heat. Add onion and bell pepper and sauté 3-4 minutes then add the garlic for 1 minute. Remove to a plate. Add 1 tbsp olive oil to the same pan and add the shrimp cooking them 1 or 2 minutes on each side until nearly cooked. Return onion, bell pepper and garlic to the pan along with the salt, red pepper flakes, pepper, broth and lemon juice. Bring to a boil for 1 minutes then stir in the zucchini noodles and oregano. Toss together for 2-3 minutes or until zucchini noodles are tender. Serve with parmesan cheese. Makes 3-4 servings.

Simple Shrimp Dumpling Soup

First snow fall and soup season is upon us. This one comes together quickly and can be customized to what you have on hand... perogies instead dumplings, chicken for shrimp. You get the idea. 

Ingredients:

1 tbsp olive oil

1" ginger, minced

2 tsps minced garlic

1 leek, sliced thinly

1 tsp coriander

8 cups chicken broth

1 cup water

6 mushrooms, sliced

1/2 cup diced bell pepper

1 cup spinach, roughly chopped

2 tbsps soy sauce

1 tsp sesame oil

1/2 lb shrimp (about 18 31-40 size)

16 store bought frozen dumplings or perogies 

In a soup pot on medium heat, add olive oil then ginger, garlic, leek and coriander and stir together 2 minutes. Add chicken broth and water and bring to a boil. Add mushrooms, bell pepper, spinach, soy sauce and sesame oil. Bring back to a boil and add the dumplings or perogies. Simmer until they float to the top, 6-8 minutes. Add the shrimp in the last 3 minutes and it's ready! Serves 3-4

Garlic Butter Shrimp and Noodles

Need a super quick comfort food meal that comes together in about 20 minutes? This is it! Not fancy, just satisfying.

Ingredients:

8 oz egg noodles

12 oz shrimp

4 tsps minced garlic

1/2 cup Parmesan

4 tbsps butter

2 tbsps vegetable oil

zest and juice of 1/2 a lemon

salt and pepper to taste

parsley 

Cook the egg noodles as directed on package to al dente. Drain and set aside. In a large skillet heat the butter and oil to medium. Add the shrimp and cook 4-6 minutes until no pink remains, then add the garlic for 30 seconds. Add the lemon zest, juice, salt and pepper. Drop the egg noodles into the skillet and toss to coat. Stir in the parmesan cheese and serve with a sprinkle of parsley. Serves 3

Shrimp and Quinoa Stir Fry

There was so much rich umaminess (is that a word?!) to this dish! Surprisingly simple yet it hit the taste buds just right! 

Ingredients:

1/2 cup quinoa

3 tsps vegetable oil

8 oz (1/2 lb) shrimp

1/2 cup finely chopped carrot

1/2 cup diced mushrooms

1/2 cup thinly sliced red onion

2 tsps minced garlic

2 tbsps sliced garlic scapes or green onions

1/2 cup chopped kale

1/4 cup low sodium soy sauce

2 tsps sesame oil

2 tsps rice wine vinegar

1/2 tsp freshly grated ginger

fresh chopped parsley and black sesame seeds to garnish 

Cook the quinoa as directed. While that cooks heat 1 tsp vegetable oil in a large skillet to medium high heat. Add shrimp and cook about 3 minutes or until opaque. Remove to a covered bowl. Add 2 tsps vegetable oil to the same skillet and add the carrot, mushrooms, onion, garlic, garlic scapes and kale, cooking 3 minutes stirring occasionally. Combine the soy sauce, sesame oil, rice wine vinegar and fresh ginger. Reduce the heat to low and add the shrimp, quinoa and sauce. Stir and heat through for 3-4 minutes. Plate and top with fresh chopped parsley and black sesame seeds. Serves 2

Sweet and Sour Pineapple Shrimp

These succulent shrimp are ready in a flash and served with your favourite rice make a quick and easy Asian inspired stir fry dinner.


Ingredients:

3/4 lb shrimp, 51/70 size

3/4 cup fresh pineapple chunks 

2 tbsps cornstarch

1/2 tsp garlic powder

salt and pepper to taste

pinch red pepper flakes

2 tsps soy sauce

1/4 cup pineapple juice (or orange)

1/4 cup ketchup

2 tbsps brown sugar

1 tbsp apple cider vinegar

1/4 cup diced onion

1/4 cup diced sweet bell pepper

1 medium carrot, julienned

2 tbsps vegetable oil, divided

4 button mushrooms, sliced

1 tsp fresh minced ginger

handful of greens (optional)

sesame seeds to garnish

 
Combine the cornstarch, garlic powder, salt, pepper and red pepper flakes together then toss in the shrimp to coat. Set aside. Mix the soy sauce, pineapple juice, ketchup, brown sugar and apple cider vinegar together and set aside. Heat 1 tbsp oil in a skillet on medium high. Add onion, bell pepper, carrot, mushrooms, pineapple and ginger (and greens if using). Stir fry 3 minutes then push to the sides of the pan leaving a space in the middle. Add 1 tbsp oil and the shrimp and fry 4-5 minutes or until no pink remains. Pour in the sauce and stir together for 2 minutes.

Plate and garnish with sesame seeds. Serves 2

Easy Shrimp, Mushrooms, Peppers and Pasta

Quick and easy meal with pretty much all kitchen staples, except maybe the white truffle infused finishing oil for an extra little hit of umami.  If you don't have it a drizzle of your best olive oil will work too.

Ingredients:
350g shrimp
8 or 9 white mushrooms, sliced
1-2 small bell peppers, sliced
1 cup chopped kale
3 tsps minced garlic
5-6 oz spaghetti 
2 tbsps olive oil + 1 tbsp olive oil
1 tbsp butter + 1 tbsp butter
1/4 - 1/2 cup reserved pasta water 
2 tbsps lemon juice
1/4 cup parmesan 
1/4 tsp red pepper flakes
Black pepper to taste 
White truffle infused finishing oil

Boil the spaghetti as directed on package.
Heat 2 tbsps olive oil and 1 tbsp butter in a skillet to medium. Add mushrooms and peppers and cook 3-4 minutes then add the garlic for 1 minute. Remove to a plate. Add 1 tbsp olive oil and 1 tbsp butter to the pan and sauté the shrimp until pink. Add black pepper to taste. Add the kale for 1 minute then return the peppers and mushrooms to the pan. Reserve the pasta water then drain the spaghetti. Toss the pasta in a pot with the reserved pasta water, lemon juice, parmesan and red pepper flakes. Plate the spaghetti and top with shrimp and veggies and finish with a drizzle of truffle oil.
