Use your sourdough discard to make this light and moist snacking cake. A scoop of maple ice cream compliments it nicely!
Ingredients:
1/3 cup milk or 10% cream
1 tsp lemon juice
1/2 lb apples, cut in thin slices
2/3 cups brown sugar
1 egg
1/3 cup sourdough discard
3 tbsps vegetable oil
1 tsp vanilla
1 cup + 2 tbsps flour
1 1/2 tsps baking powder
1/2 tsp salt
Topping:
3 tbsps sugar
1/2 tsp cinnamon
Stir milk and lemon juice together and set aside. Preheat the oven to 375°F. (You will lower the heat later) Whisk the brown sugar, egg and discard together then add the oil, milk mixture and vanilla. In a small bowl mix the flour, baking powder and salt together. Add the dry ingredients to the wet mixing just until combined. Fold in the apples and spoon batter into a parchment lined 8 X 8" baking pan. (Helpful hint: wet the parchment paper and squeeze out excess water then line the pan) Combine the sugar and cinnamon together and sprinkle evenly over top of the batter. TURN DOWN temp to 325°F and bake 35-37 minutes or until a cake tester comes out clean. Serves 9
