I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Whole Chicken in Air Fryer

When the weather gets hot who wants to put the oven on? Air fryer to the rescue. This small chicken took less than an hour in the air fryer without heating up the kitchen! 

Ingredients:

1 1/2 lb whole chicken 

1 tbsp olive oil

1/2 tsp smoked paprika

1 tsp garlic powder

1 tsp dry oregano

1/4 tsp dry mustard

1/4 tsp black pepper

Dry chicken with paper towels then rub olive oil all over. Cover with a mixture of the seasonings and roast in a 360°F air fryer for 45-50 minutes. Start with the breast side down then flip it over halfway through the cooking time. When done the internal temperature should read 165°F. Rest 10 minutes before slicing. Serves 4-5

Air Fryer Acorn Squash

Don't wait until fall. Enjoy lightly caramelized and fuss-free air fryer acorn squash anytime! The only real hands on work is to cut and gut the squash!

Ingredients:
1 acorn squash 
1 tsp olive oil
Salt and pepper to taste 
2 pats of butter
Maple syrup 

Cut squash in half lengthwise and scoop out the seeds. A grapefruit spoon works great! Then brush with olive oil and add salt and pepper. Air fry cut side up at 400°F for 18 minutes. Check with a fork, it should be nearly tender. Return to fryer for 2 minute intervals until done. Immediately add a pat of butter to each then drizzle with maple syrup.  Serves 2

Brown Sugar Air Fryer Pork Roast

This air fryer pork roast has a caramelized crust that locks in a tender interior and is enhanced with a saucy sweet gravy. 

Ingredients:

2 1/4 lb boneless pork loin roast

2 tbsps finely chopped onion 

1 tbsp brown sugar

1 tbsp smoked paprika

1 tsp ground mustard

1 tsp minced dry onion

1 tsp garlic powder

1/4 tsp cayenne 

1/4 tsp turmeric 

1 tbsp honey

1 tbsp olive oil 

salt and pepper to taste 

1 cup chicken broth

1 1/2 tbsps cornstarch

2 tbsps cold water

salt and pepper (or Mtl steak spice) 

Score through the fat of the pork loin then stuff the crevices with chopped onion. Mix the ingredients from brown sugar to salt and pepper together. Reserve 1 tsp of the mix for later. Spread the rest all over the pork. Cover with plastic wrap and refrigerate for 3 hours. Preheat air fryer at 360°F for 5 minutes. Unwrap meat and place in air fryer. Roast for 40 minutes or until internal temperature reaches 145°F. Let the pork rest for 5 minutes before slicing. While it rests, make the sauce. Add broth to a saucepan along with the reserved marinade paste. Whisk together and add any juices accumulated in the air fryer and on the plate where the roast is resting. Simmer together for 5 minutes. Mix the cornstarch and cold water together then whisk into the sauce. Simmer a couple of minutes to slightly thicken. Add salt and pepper or Montreal steak spice if desired. Serves 4

No Dough Chicken Calzone

No joking, these are amazing!! When the fam says "you can make THESE again!", you listen! 

Ingredients:

454g (1 lb) ground chicken

3 tbsps cream cheese, at room temperature

handful of spinach or chopped kale

2-3 tbsps chopped sundried tomatoes

15 grape tomatoes, halved

3/4 cup mozzarella

1 egg

2-3 tbsps Panko

1 tbsp parmesan

2 tsps garlic powder

2 tsps minced dry onion

1 1/2 tsps smoked paprika

salt and pepper to taste 

Mix the chicken with garlic powder, minced dry onion, smoked paprika, salt and pepper. Divide into 3 portions. Place one portion on a piece of parchment and flatten into an oval shape 1/4-1/2" thick. Continue with the other two. Spread cream cheese on half of each piece then divide the spinach, sundried tomatoes, grape tomato halves and mozzarella on the same half side. Using the parchment to help, fold the empty side of the ground chicken over the filling and seal edges pressing with a fork. Brush with beaten egg. Mix the Panko and parmesan together and sprinkle on each calzone. Air fry at 350°F for 18 minutes. They can also be baked on a pizza stone in a 375°F oven for 25 minutes but the air fryer method is superior. Can be served with marinara sauce or salsa. Makes 3 no dough chicken calzones.

Air Fryer Glazed Stuffed Chicken Breasts

Light and delicious stuffed chicken breasts with a sweet and tangy glaze. And cooked in just 15 minutes!

Ingredients:

 2 boneless, skinless chicken breasts

2 tbsps cottage cheese

2 tbsps shredded cheddar cheese

1 tbsps finely diced yellow bell pepper

1 tsp minced garlic

black pepper to taste

1 tbsp parmesan

1 tsp olive oil

1 tsp dry parsley

2 tbsps sweet chili sauce 

1/2 tsp soy sauce

1/2 tsp sesame oil

pinch red pepper flakes

Mix the cottage cheese, cheddar cheese, bell pepper, garlic, black pepper, parmesan, olive oil  and parsley together. Make a pocket in each chicken breast and fill with the cheese mixture. Tie up with kitchen twine. Oil the air fryer basket. Combine the sweet chili sauce, soy sauce, sesame oil and red pepper flakes together and brush all over the chicken then place them in the air fryer. Bake at 375°F for 15-17 minutes to an internal temperature of 165°F. Don't forget to snip off the twine before serving! Serves 2

Air Fryer Bread Rolls

Bread rolls in minutes! And pumped up with protein!

Ingredients:

300g (about 1 cup and 2 tbsps) Greek yogurt or cottage cheese

300g (about 2 1/4 cups) flour

1 1/2 tsps baking powder

pinch of salt (optional) 

Add everything to the mixer and combine using the dough hook. It may look crumbly at first but will come together after a couple of minutes. Then put the dough on a lightly floured board and knead a few times. Form the dough into a small log then cut into 6 pieces. Take a slice of dough and fold it under itself, pinching the ends together. Place pinched end down on the air fryer tray that has been sprayed with cooking oil. Continue with the rest taking care that there is space between each roll. As an option you may want to brush the tops with milk, cream or egg wash. Air fry at 350°F for 12-15 minutes. Best eaten while warm. Makes 6 rolls.

Mini Air Fryer Pizza Bites

Quick and easy air fryer pizza roll ups are ready in no time for a light lunch, snack or informal appetizer. 

Ingredients:

4 - 6" soft tortillas, cut in quarters

1/2 cup shredded mozzarella

1/2 cup pizza sauce

16 slices of pepperoni

olive oil 

After quartering the tortillas take each triangle and spoon about 3/4 tsp of sauce and spread. Add a slice of pepperoni and some cheese. Roll them up from the large side to the point and lay seam side down in the air fryer basket. Brush with olive oil and bake at 400°F for 5-7 minutes. Could be served with more sauce for dipping if desired. Serves 2-3

Air Fryer Mini Potatoes

This little two serving potato recipe is quick and easy. Customize with your favourite seasonings and flavoured oils. 

Ingredients:

3/4 lb mini potatoes (russet, goldens or red)

1 tbsp olive oil (spicy, if you've got it!)

1/2 tsp Italian seasoning

1/2 tsp garlic powder

salt and pepper to taste

Coat the potatoes in oil then toss in the seasonings. Air fry at 400°F for 10 minutes, roll them around and return to fry 8-10 minutes longer.

Serves 2

Honey Mustard Air Fryer Salmon

This is an incredibly simple way to prepare salmon. Just add some tender spring vegetables like these hosta shoots and snow peas for a fresh, light dinner.

Ingredients:

2 salmon fillets, 4 oz each

1 tbsp grainy Dijon mustard

2 tsps honey

lemon slices

Pat the salmon fillets dry with paper towels. Mix the Dijon and honey together and brush on the tops of the fillets. Spray the air fryer basket and place the salmon. Top with a couple of thin slices of lemon and air fry at 375°F for 8-10 minutes or until an internal temperature of 145°F is reached. Serves 2

Marinated Air Fryer Tuna Steaks

A light marinade compliments the tuna steaks with a subtle citrus flavour. And this easy air fryer method cooks them just the way you like!

Ingredients:

2 - 4 oz tuna steaks

2 tbsps orange juice

1 tbsp soy sauce

1 tbsp olive oil

1 1/2 tsps lime juice

1 tsp fresh chopped parsley

1 tsp minced garlic

cracked black pepper to taste

Mix everything together and reserve 2 tbsps of the mix. Then marinade the tuna, coating on both sides, in the fridge for 30 minutes. Remove from marinade and place in an oil sprayed air fryer basket. Fry at 375°F for 4-5 minutes (medium rare), 5-6 minutes (medium) and 6-7 minutes (well done). Flip halfway through the cooking time and brush with reserved marinade. The tuna steak pictured above was cooked 5 minutes. Serves 2

Air Fryer Stuffed Chicken Breasts and Mushrooms

Stuffed with big flavour thanks to a simple combination of kitchen staples, these air fryer stuffed chicken breasts will be a fast favourite. And the bonus stuffed mushrooms (because all the filling was too much for the chicken breasts) were so good you could just fill a bunch of mushrooms with the stuffing and skip the chicken altogether for an easy appetizer.

Ingredients:

2 boneless, skinless chicken breasts

1/4 cup cottage cheese

1/4 cup shredded mozzarella or cheddar

1 tbsp finely chopped red bell pepper

1/4 cup chopped spinach 

1/4 cup chopped mushrooms

2 tbsps parmesan cheese

2 tsps minced garlic

salt and pepper to taste

1 tsp olive oil

1/2 tsp dry oregano

1/4 tsp fennel seed

pinch red pepper flakes

a few extra mushrooms for stuffing

Combine all the filling ingredients. Slice a pocket into the chicken breasts and stuff each with approximately 1/2 cup of the filling. Use the rest in the mushrooms. Tie the chicken breasts with kitchen twine. Spray the air fryer basket with a little oil along with a light spray on both the chicken and mushrooms. Place chicken in the air fryer and cook at 375°F for 8 minutes. Then add the mushrooms beside the chicken and cook everything for another 8 minutes. The internal temperature for the chicken should read 165°F.
Makes 2 servings.

Lightly Spiced Air Fryer Chickpeas

Super easy healthy protein snack or a crispy salad topper!

Ingredients:

14 oz can chickpeas, drain rinse and pat dry

1 tbsp olive oil

1 tsp smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp ground cumin

1/4 tsp cayenne (optional)

salt and pepper to taste

First, make sure the chickpeas are well dried then mix them with the oil in a bowl, add the seasonings and coat well. Air fry at 400°F in a single layer (you may have to work in batches) for 13-15 minutes, shaking them around halfway through the cooking time. You may want to fry a little longer but just go 1 minute at a time and remember they will crisp up a little more while cooling. Once cooled store in an air tight container for a few days. 

Makes 4 snack servings

Air Fryer Mexican Stuffed Chicken

Elevate your dinner game with these air fried stuffed chicken breasts cooked to juicy perfection! 

Ingredients:

2 boneless, skinless chicken breasts

1 oz shredded Monterey Jack or mozzarella cheese

1/4 cup chopped spinach

2 tbsps refried beans

1/4 tsp ground cumin

1 egg, beaten

2 tbsps parmesan cheese

Pat the chicken dry with paper towels and flatten with a rolling pin between sheets of wax paper or saved waxed cereal bag. Spread with refried beans. Mix the shredded cheese, spinach and cumin together and spoon onto one side of the chicken. Fold over then brush with beaten egg. Coat with parmesan. Place the chicken in an oiled air fryer basket and cook at 400°F for 10-12 minutes or until internal temperature reaches 165°F. Serve with salsa.

Air Fryer Breaded Cajun Cod

So crispy, yet tender and juicy inside! And healthier than fried cod using the air fryer.

Ingredients:

400g (5 small fillets) cod

1 egg, beaten

1/2 cup oat or all purpose flour

1/2 cup Panko

1 tsp blackened Cajun seasoning

spray oil

Pat fillets dry with paper towels. Whisk the egg in a bowl. Place flour in another bowl. And combine the Panko and Cajun seasoning in yet another bowl. Now that you've got your breading station set up it's time to start. Dredge the fish in flour, dip in egg then coat in Panko. Place in an oil sprayed air fryer basket and give the fish a light spray of oil as well. Air fry at 400°F for 10-11 minutes, flipping over halfway through. The internal temperature should read 145°F.

Serves 2-3
