I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Apple Pumpkin Spice Muffins

Do you still have a bag of apples left in the fridge from apple picking? Why not give these a try...


Ingredients:
4 eggs
1 cup vegetable oil
2 1/2 cups sugar
1 1/2 cups pumpkin purée
1/2 cup applesauce
3 cups flour
1/2 cup whole wheat flour
2 tsps baking soda
1 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1 1/2 cups diced and peeled apple

In a large mixer bowl cream the eggs, oil, sugar, pumpkin purée and applesauce together. In another bowl mix the flours, baking soda, salt and spices together. Add the dry ingredients to the wet just until combined then fold in the diced apple.

Pour into paper lined cupcake tins and bake at 350°F for 25-30 minutes. Makes 30 medium sized muffins.
