I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Sweet Potato Hash

Here's an easy fall side dish or if you're up for it, a nutritious breakfast. Just add eggs!

Ingredients:
1 large sweet potato, cubed
3 tbsps vegetable oil
1/2 cup diced onion
1/2 cup diced red bell pepper
1 1/2 tsps minced garlic
1 tsp smoked paprika
1/2 tsp turmeric
salt and pepper to taste
fresh parsley

Peel and boil the sweet potatoes for 5 minutes then drain.
In a large skillet heat 1 tbsp oil to medium high. Sauté the onion and bell pepper for 4-5 minutes, then add the garlic for 1 minute. Remove to a plate.
Add 2 tbsps oil to the same skillet and brown the sweet potatoes, cooking 3-4 minutes before stirring then cooking until golden on all sides.


Add the smoked paprika, turmeric, salt and pepper. Return the rest of the vegetables to the skillet and heat through.
If you want to cook eggs in it just make a well for each egg (2-3 should fit nicely), crack the egg into the well and cover with a lid. Cook until eggs are done to your liking.

Serve with fresh chopped parsley.
Serves 3-4.
