I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Caprese Chicken Legs

Juicy, garlicky tomatoes, mozzarella and fresh chopped herbs ... everything you love about caprese with the addition of perfectly cooked, protein rich chicken. 


Ingredients:
3 chicken legs, split thigh and drumstick
2 tbsps olive oil
1 tsp dry oregano
1/2 tsp dry basil
1/2 tsp fennel seed
salt and pepper to taste
2 cups cherry tomatoes, halved
2 tbsps minced garlic
1/2 cup chopped onion
1/2 cup chopped red or orange bell pepper
1/4 cup balsamic vinegar
1 tbsp brown sugar
1 cup shredded mozzarella
2 tbsps fresh chopped basil and/or parsley
zest and juice of 1/2 a lemon

Oil a 13 X 9" baking dish. Coat chicken pieces with olive oil and arrange in the dish. Mix oregano, basil, fennel, salt and pepper together and sprinkle all over. Place the tomatoes, onion, bell pepper and garlic all around the chicken pieces.


Then whisk the balsamic, brown sugar, lemon juice and zest together and pour over the meat.


Bake at 425°F for 35-45 minutes then top with mozzarella and return to the oven for 5-10 minutes longer to melt the cheese.


Top with fresh chopped basil/parsley and serve along with pan juices.
