I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Flank Steak with Cherry Tomatoes

Balsamic marinade gives this dinner for two steak a great, rich flavour enhanced by the sweet charred cherry tomatoes. Summer isn't over yet!


Ingredients:
1 lb flank steak
2 tbsps balsamic vinegar
2 tbsps olive oil
2 tsps dijon mustard
1 tsp honey
1 tsp minced garlic
salt and pepper to taste
1 cup cherry tomatoes
1/2 cup crumbled feta
1 tbsps fresh chopped basil leaves

Mix the balsamic, olive oil, dijon, honey, garlic, salt and pepper together. Use 1/2 of it to marinate the steak in the fridge overnight and reserve 1/2 for later.


When ready to cook remove the steak from the marinade and discard (the marinade, not the steak 😃). Heat barbecue to medium high temperature and grill 3-5 minutes per side. It can also be cooked in a skillet if you prefer. Let rest 5 minutes.
In the meantime heat a skillet to medium high. Add tomatoes and a little olive oil and cook until the tomatoes are blistered and yummy!
Slice the steak against the grain, top with the tomatoes, crumbled cheese and chopped basil. Drizzle the remaining marinade over all and dig in!
