I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Homemade Tomato Potato Soup

Simple, delicious and with a hot sauce kick is guaranteed to warm you from your nose to your toes!

Adapted from aheadofthyme.com

Ingredients:
3 medium potatoes, cut in chunks
3-4 cups reserved potato water
2 tbsps olive oil
1 medium onion, chopped
2 tbsps minced garlic
1 - 28 oz can diced or puréed tomatoes
1 tsp dried oregano
1 tsp dried basil
1 1/2 tsps salt
1/2 tsp pepper
1 tsp - 1 tbsp hot sauce
1 cup chicken broth
1 heaping tbsp tomato paste
1 tbsp worcestershire sauce
2 tbsps fresh chopped parsley

Start by boiling the potatoes until tender. Drain, reserving the water and set aside.
In a large pot heat the olive oil to medium heat and add the chopped onions. Cook 3 minutes then add the minced garlic for 1 minute. Add the remaining ingredients and cook 5-10 minutes.

Add the cooked potatoes to the soup pot along with 2 1/2 cups of the potato water.

Using a food processor, and working in batches, purée the soup.

Add more of the reserved potato water to reach the consistency you want, then taste to see if you want to add more salt and pepper.

Simmer 20 minutes and serve with more fresh chopped parsley
