I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Sweet and Spicy Baked Chicken Legs

Juicy and tender and baked right in the oven. You control the spice... add more chili powder. Want more heat... add more hot sauce 🔥


Ingredients:
4 chicken legs, split
2 tbsps vegetable oil
1 tsp chili powder
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp pepper
1 cup fresh pineapple chunks

Sauce:
1 tbsp honey
1-2 tsps buffalo sauce (or your fave like sriracha or Frank's)
juice and zest of 1/2 lemon
salt and pepper to taste
(And more hot sauce if you like it hot, these were mild. I'm a wimp!)

Separate the thighs and drums and pat the chicken dry. Mix the vegetable oil, chili powder, garlic powder, paprika, salt and pepper together in a bag. Toss the chicken in and shake and massage to get the pieces well coated.

Place the chicken on a parchment lined baking sheet, preferably with high sides. I used a regular sheet and almost had a greasy, juicy tsunami in the oven!
Put the pineapple chunks in the same bag the chicken had been in and give it a shake. Then put the pineapple in between the chicken pieces.


Bake at 375°F for 50 minutes.


Mix the sauce ingredients together and spoon onto the chicken. Return to the oven for 15 minutes basting a couple of times.

That's it!
