I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Cauliflower and Kale Coleslaw

Coleslaw literally means cabbage salad. But that shouldn't stop you from adding other crispy, crunchy veggies to the mix. I know, kale is not crispy, crunchy but it's in my garden and it's been through a frost so it's nice and sweet right now. My summer crush on kale continues...


Ingredients:
1 1/2 cups small cauliflower florets, matchstick some of the stems too!
3/4 cup lightly packed, chopped kale
1 cup shredded carrot
1 cup bagged coleslaw mix (or shredded cabbage)
1/2 cup chopped tart apple

1/4 cup mayonnaise
1 1/2 tbsps apple cider vinegar
2 1/2 tbsps honey
1/2 tsp lemon juice
1/4 tsp salt

Prepare the dressing, then prep all the veggies and apple. Toss it all together and refrigerate for several hours. And it'll keep a couple of days in the fridge! It's that easy!


Serves 4 as a side
