I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Spaghetti with Cherry Tomatoes and Kale

I often make some form of this fresh tomato and olive oil pasta. One of my favourites...

Ingredients:

2 cups cherry tomatoes

1 - 1 1/2 cups chopped kale

1/2 cup olive oil

3 tsps minced garlic

1 tbsp tomato paste

1 tsp sugar

1 tsp dry oregano

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp pepper

pinch of turmeric

pinch of red pepper flakes

1/2 lb spaghetti

fresh parsley 


Heat oil in a large frying pan. Add the tomatoes and cook on medium heat about 10 minutes, adding the garlic in the last minute.


Add the kale, stir together, then remove from heat. You could also use spinach or arugula.


Combine the tomato paste with the sugar, oregano, paprika, salt, pepper, turmeric and red pepper flakes and add to the tomatoes.
Cook the spaghetti then drain and toss with the sauce.
Sometimes we have it tossed with chopped cooked chicken.

Serves 3-4


Add fresh parsley to serve.
