I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

One Pot Sausages with Rice

Protein, grain and veggies in one pot and dinner is on the table in 30 minutes.

Ingredients:

2 large Italian sausages, 1 1/2- 2 lbs (sweet fennel used here)

2 tbsps olive oil

1 bell pepper, sliced

1 onion, sliced

1 tsp dry basil

1/2 tsp salt

1/4 tsp pepper

1 cup whole grain brown rice

2 tsps minced garlic

2 pinches red pepper flakes

2/3 cup chicken broth

1 - 28 oz can diced tomatoes

a handful of chopped kale

fresh basil

Slice sausage in thick slices, about 1". Heat 1 tbsp oil in skillet and brown sausages for about 5 minutes, then remove to a plate. Add 1 tbsp oil to the pan along with the pepper and onion slices, dry basil, salt and pepper. Cook until the vegetables soften.


Add the canned tomatoes, broth, garlic, pepper flakes, kale and rice.

Bring to a boil then cover and simmer on low 10 minutes or until rice is tender. Return the sausages to the mix to warm.

And serve with fresh basil.
