I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Caprese Salad for Two

Tomatoes are at their peak right now, so why not try this simple, classic and elegant caprese? 


Ingredients:
2 large, thick slices of tomato
2 thick slices of mozzarella cheese
some cherry tomatoes, halved
fresh basil leaves
2 tsps olive oil
1 tsp balsamic vinegar
salt and pepper to taste

First I wanted to share with you some pictures from our adventure in cheese-making. No... you don't need homemade cheese for this recipe, but this was pretty neat! During the covid lockdown we found out about U-Main Cheesemaking Kits. So far we've made ricotta and mozzarella. For the salad, find the biggest, juiciest tomato and slice it thick. Then top it with a thick slice of mozzarella cheese.
Whisk together the oil and vinegar. Top the cheese with some cherry tomato halves and basil leaves.
Then drizzle on the dressing and salt and pepper to taste just before serving.
So fresh and delicious!
