I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Orange Zucchini Loaf

Orange gives this zucchini loaf a delicious accent flavour and is delicately spiced with cinnamon and allspice. 

Ingredients:

1 1/2 cups flour

1 cup sugar

3 oz vegetable oil

zest of 1 orange

2 oz fresh squeezed orange juice

1 1/2 cups unpeeled shredded zucchini

1/2 tsp baking powder

1/2 tsp baking soda

2 eggs

2 tsps cinnamon

1/4 tsp allspice

1/4 tsp salt

First shred the zucchini on a box grater, then roll it up in a clean dishtowel and wring out the excess liquid. Set aside. Preheat oven to 350°F. In a large bowl combine the flour, baking powder, baking soda, cinnamon, allspice and salt. Set aside. In another bowl mix the sugar, oil, zest, orange juice and eggs together. Add the dry ingredients to the wet in three additions. Stir in the zucchini. Grease an 8 X 4" loaf pan and pour the batter in. Bake at 350°F for 60-65 minutes or until a cake tester comes out clean. Cool on rack for 30 minutes then remove from pan and cool completely before slicing. Serves 8
