I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Chicken Florentine Crepes

Why is it that crepes just feel a little fancy for dinner? These ones were made on my old Braun Electric Crepe Maker but store bought will work just fine. The filling is a savory mix of chicken, spinach and cheese in a cream sauce. A glass of chilled white wine compliments perfectly!

Ingredients:

6 - 7" crepes

1 medium boneless chicken breast

1 cup packed baby spinach leaves

2-4 tbsps 10% cream

1/2 cup parmesan

1 cup shredded mozzarella, divided 

1/4 cup butter

1/2 tsp garlic powder

1/4 - 1/2 tsp salt

1/2 tsp pepper

Preheat oven to 350°F. Cut chicken into bite-size pieces. Melt butter in frying pan on medium heat and cook chicken 5-6 minutes. Add spinach for 2 minutes to wilt. Then add the seasonings, parmesan, cream and 1/2 of the mozzarella. Stir to melt the cheese. Remove from heat. Place the crepes on a work surface and divide the filling onto each. Roll up and place seam side down in a buttered baking dish. Top with remaining mozzarella and bake at 350°F for 15 minutes. Serves 2-3
