I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Grilled Zucchini Ribbons

Here's the first of what probably will be many zucchini recipes to come this summer. This one's a light offering for your dinner plate.

Ingredients:
1 medium zucchini 
1 tsp minced garlic 
1 tbsp light olive oil
1 tsp honey
1 1/2 tsps sriracha sauce
1/2 tsp dry oregano
salt and pepper to taste

Slice the zucchini lengthwise in thin ribbons using a mandolin or just use a knife. Trick is to get the thickness right. Too thin and it will tear, too thick and it will crack when threading onto skewers.
Anyways, feed the strips onto skewers, if they crack just keep going. You should be able to fill 2 - 9" skewers. Use the zucchini ends on the end of each stick to keep the ribbons on.

Combine everything else, and when ready to grill, brush all over the zucchini ribbons.

Cook on an oiled grill about 2-3 minutes or more per side depending on if you want them tender-crisp or golden.
