I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Savory Lime Chicken

Savory lime chicken with mango salsa and lime quinoa is a perfect light and bright summer meal!


Ingredients:
1/4 cup olive oil
2 tbsps lime juice
1 tbsp honey
1 tsp ground cumin
1 tbsp sodium reduced soya sauce
1 tsp minced garlic
2 boneless, skinless chicken breasts, sliced in half lengthwise
2 tbsp vegetable oil

Mango Salsa:
1 mango
1/4 cup diced red onion
1/4 cup diced red pepper
salt and pepper to taste
pinch red pepper flakes
1 tsp lime juice

Lime Quinoa:
1 cup quinoa
2 cups broth or water
1 tbsp butter
1 tbsp lime juice
2 tbsps chopped fresh parsley
salt and pepper to taste

To start with the chicken, mix the olive oil, lime juice, honey, ground cumin, soya sauce and minced garlic together then reserve 1/4 cup. Add the chicken to the rest and marinate for at least 1 hour (6-8 hours...even better!)

When ready to cook oil a grill or skillet with vegetable oil. Add the chicken discarding the marinade. Cook about 10-12 minutes as the pieces are thin after having been sliced in half, brushing the reserved marinade on after the first side is cooked. 


For the mango salsa prepare the mango and vegetables in a bowl and add salt, pepper and red pepper flakes. When ready to serve toss with lime juice for a nice light dressing.


To prepare the quinoa bring the broth or water to a boil and add the butter and quinoa. Return to a boil, then cover and simmer until tender. Stir in the lime juice, parsley, salt and pepper and fluff up.

And your whole meal is ready to serve!
