I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Double Coffee Ricotta Tiramisu

Whether it's called Greek Frappé or Dalgona this whipped coffee is all over the internet! Here's a light tiramisu, or "pick-me-up" using whipped coffee and ricotta.
Ingredients:
2 tbsps sugar
2 tbsps instant coffee
2 tbsps hot water
1/2 cup ricotta, homemade or store bought
1/4 - 1/2 cup plain yogurt
2 tbsps icing sugar
1/2 tsp vanilla
10 lady finger biscuits
1/4 cup strong brewed coffee for dipping
cocoa powder for dusting

Pick a dish that will hold 5 lady fingers. Quickly dip (don't soak) each biscuit in the brewed coffee and sit in the dish. 

Whip the ricotta, yogurt, icing sugar and vanilla together. The amount of yogurt will depend on the consistency of the ricotta you use. Spread this mixture over the biscuits.

Dip the other 5 biscuits in coffee and layer over the ricotta.

Next whip the 2 tbsps sugar, 2 tbsps instant coffee and 2 tbsps of hot water together until frothy and spread over the second layer of lady fingers. 

Finish with a good sprinkling of cocoa powder, cover and refrigerate 8 hours or overnight.
Then cut into it and enjoy the caffeine buzz!
