Made this recipe way back when. Hadn't made it for years but came across it again last week. First bite and my husband said "I remember this!" The best part is that the mandarin segments don't break down when baked so you get a nice little juicy topping.
284 ml can mandarin oranges segments
184 g blueberry muffin mix
Drain mandarins well.
Prepare muffin mix as per package and pour into a greased 8 X 8" pan.
Arrange segments on top of the batter.
Prepare streusel topping.
Mix together:
1/4 cup brown sugar, packed
3 tbsps flour
2 tbsps butter
1/4 tsp cinnamon
And crumble over the mandarins.
Bake at 400 F for 25-30 minutes.
