I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Sausages, Apples and Potatoes

Just right for this cool spring day. A one pot meal that's hearty with a touch of sweetness.

Ingredients:
1/3-1/2 lb uncooked sausages cut in 2" pieces (I used bacon cheddar flavour)
2 tbsps olive oil, divided 
3 or 4 green onions, sliced 
2 medium potatoes, peeled and cubed 
2 small apples, cut in wedges
1/2 bell pepper, diced 
1 medium onion, diced 
2 tsps minced garlic 
1/2 tsp cinnamon 
1/2 tsp sage
1 cup chicken broth 

In a large saucepan heat 1 tbsp olive oil to medium and cook the sausages 5-6 minutes.  Remove to a plate. Reduce heat to medium low and add 1 tbsp olive to the pan along with the onion, potatoes and bell pepper. Cook 8-10 minutes then add the garlic for 1 minute. Add green onions, cinnamon and sage. Return the sausages to the pan and add the apples and broth. Cover for 10 minutes then stir and cook another 5 minutes.  Check potatoes and apples for tenderness and cook a little longer if needed.  Serves 2

One Pot Sausage and Vegetables

Here's a hearty, healthy fridge clean out recipe. A little of this, a little of that and substitutions are encouraged depending on what's hanging out in your fridge.

Ingredients:

3 Bolognese  sausages, sliced (190g/7 oz)

1 tbsp olive oil

1 small onion, diced

2 medium potatoes, sliced

1 small zucchini, sliced 

1/2 bell pepper, sliced

2 cups spinach, chopped

1/2 cup frozen edamame beans

1 cup chicken or vegetable broth

Heat oil in a skillet to medum high and brown the sausage slices. Add the onion and cook 2 minutes, then add the potatoes and cook 5 minutes. Pour in the broth to deglaze the pan. Bring it to a boil then reduce to a simmer. Add the zucchini, bell pepper and edamame. Cover and cook 15 minutes or until the potatoes are tender. Toss in the spinach and cook 1-2 minutes longer.

Serves 2

Sausages with Apples

These Empire apples were the perfect sweet, tart compliment to cheddar apple sausages! You can use any sausage you like and any apple, as long as it's a cooking apple that holds it's shape as well as the Empire.

Ingredients:

1 tsp olive oil

1 small onion, sliced 

 6 sausages, 375g

 2 Empire apples, cut in wedges (or other cooking apple)
 
1/2 cup chicken broth
 
1/4 tsp dry thyme 

Brown the onion in olive oil on medium high heat 2-3 minutes. Then push them aside to make space in the center of the pan. Add the sausages and brown on all sides 5-6 minutes.
Scatter the apple wedges around the sausages and sprinkle with thyme.
Pour the broth in and cover. Cook on medium low to low heat 7-8 minutes or until apples are tender.

Serves 2

Air Fryer Sausages and Peppers

Here's a quick one and with less mess than if you cooked the sausages on the stovetop! You'll want to air fry them all the time!

Ingredients:
8 uncooked sausages (Used maple and black pepper this time)
2 red bell peppers, cut in strips
1 tbsp olive oil
2 tsps balsamic vinegar
Garlic powder to taste

Score the sausages each 3 or 4 times then air fry in a single layer at 360°F for 5 minutes.
Toss pepper strips with oil, balsamic and garlic powder and dump into the air fryer basket on top of the sausages. Cook for 8-10 minutes more.
Serves 4

Sheet Pan Sausage, Gnocchi and Peppers

Sheet pan simplicity featuring Italian sausages and a little crisp and chewy gnocchi. Unlike boiled gnocchi which are soft, these baked gnocchi have a bite to them! 

Ingredients:

1 lb (500g) shelf stable potato gnocchi, tri-colour here

2 bell peppers, sliced

1 small onion, sliced

1 celery stalk, sliced

1 cup cherry tomatoes

3 Italian sausages, mild or hot, cut in 1 1/2 - 2" pieces

4 tbsps olive oil

1 tsp garlic powder

1 tsp dry thyme

salt and pepper to taste

fresh parsley and/or basil to garnish

parmesan to serve 

 

Preheat the oven to 425°F

Toss the gnocchi, bell peppers, onion, celery, cherry tomatoes and sausages in oil then distribute equally onto two parchment lined baking sheets. Sprinkle with garlic powder, thyme, salt and pepper.

Bake for 15-20 minutes, stir around then return to the oven for an additional 5-10 minutes.

Air Fryer Honey Garlic Sausages

Just one ingredient: sausages. Can't get easier than that!

Ingredients:

4 honey garlic sausages

That's it!

Just slice every 3/4 inches about halfway through and sit in the air fryer. Cook at 400°F for 9-12 minutes. Pair with rice or potatoes and veg.

Glazed Hasselback Sausages

Plain old Italian sausages get a makeover, glazed with a sweet and tangy sauce and baked in the oven! So easy! You can change up the mild sausages for hot and spicy, use a different jelly or mustard ... you can even use frozen sausages if you're in a hurry. Just up the cooking time a little.  

Ingredients:
4 mild Italian sausages
2 tbsps jelly (like apple, root beer, or even jalapeño)
2 tsps old fashioned grainy Dijon mustard
1 tsp ketchup
1 tbsp brown sugar
 
First heat the jelly, mustard, ketchup and brown sugar in a small saucepan until the sugar is melted then set aside to cool.
Lay the sausages side by side on a cutting board with chopsticks on either side, like you would do for cutting hasselback potatoes. Then make 1/2" slices almost all the way through, stopping at the chopsticks. Tip: semi-frozen sausages are easier to slice then completely defrosted.
Next, spoon some cooled sauce onto each sausage in a baking dish. Try to get some glaze in between the slices too. You can marinate them in the fridge for several hours if you have the time or go straight to the oven. 
Then spoon a little more sauce on the sausages (if they've been marinating) and bake in a 400°F oven for 25 minutes, basting every 10 minutes. Lastly, give them a little broil for 2-3 minutes and serve with your favourite rice.

One Pot Pork Sausage and Rice

A quick and easy casserole that's hearty, ready in 30 minutes and you only have one pot to clean up. What's not to love?


Ingredients:
5 honey garlic pork sausages (about 1 lb), sliced in chunks
1 tbsp olive oil
1 onion, diced
1/2 red bell pepper, diced
1 tsp dry basil
1/4 tsp black pepper
1/4 tsp turmeric
2 tsps minced garlic
pinch of red pepper flakes
1 cup white rice
1 1/2 cups beef broth
28 oz can diced tomatoes
fresh parsley
handful of chopped greens (spinach, arugula, etc)

Heat oil in skillet and add sausages, browning and cooking 6-8 minutes. Remove to a plate. To the same pot add onion, bell pepper, basil, black pepper and turmeric, sautéing the veggies 2-3 minutes. Next add the rice, garlic and red pepper flakes, stirring 30 seconds before adding the broth and canned tomatoes with it's juices.
Bring to a boil then cover and reduce heat to a simmer for 15 minutes. Return the sausages to the pot, add the parsley and greens and cover to heat through 5-10 minutes.

Classic Toad in the Hole

What? Toads?!? No just pork sausages in a fluffy inside, crispy outside Yorkshire pudding. Serve it with the gravy recipe I've included or simply have it with some applesauce or mustard.


Ingredients:
1/4 cup vegetable oil
5 pork sausages or bangers (500 g)

Batter:
4 eggs
1/2 tsp sea salt
1/2 tsp black pepper
2 pinches cayenne pepper
1 cup + 1 tbsp flour
3/4 cup milk
1/4 cup water

Gravy: 
1 small red onion, finely chopped
3 or 4 mushrooms, finely chopped
2 tbsps butter
salt to taste
3 tbsps flour
2 cups chicken broth
1/2 tsp worcestershire sauce
1/2 tsp balsamic vinegar
1/4 tsp black pepper
1/4 tsp smoked paprika
1/2 tsp onion powder
and a dash of Mrs Dash original 

Combine eggs, salt, pepper, cayenne, flour, milk and water to make the batter. Whisk everything together then cover and let rest on counter for 45 minutes to an hour.

While the batter rests brown the sausages in vegetable oil until lightly golden on each side. Transfer them to a 10 X 10" baking dish and pour the remaining oil from the pan into the baking dish. Brush all over bottom, sides and the sausages. You may want to line up the sausages in the dish for even slicing and serving or just toss them in willy-nilly like I did 🤪.

If you choose to make this gravy, nicely brown the onion and mushrooms in butter 5 minutes. Add the salt and flour, then whisk in the broth, worcestershire sauce and the balsamic vinegar. Stir in the seasonings and simmer for about 5 minutes then set aside.


Preheat the oven to 425°F and pour the batter over the sausages.


Pop the dish in the oven and bake for 35 minutes.


Cut and serve with a good bit of gravy or whatever you choose. 
Serves 4-5

Grilled Sausage and Veggies

You can't go wrong with this classic combination of zucchini, red pepper and onions . We used honey garlic sausages this time around but use any sausage you like in this recipe ... hot Italian, brats, Oktoberfest. The possibilities are endless! 


Ingredients:
5 honey garlic sausages, cut in bit-sized pieces
1 small or 1/2 a large zucchini, cut in chunks
1 sweet red pepper, sliced
1 red onion, sliced
a handful of snowpeas
2 tbsps olive oil
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper

Whisk the oil, paprika, garlic powder, salt and pepper together in a bowl then add all the vegetables and toss to coat.


Set the grill heat on medium high and cook the veggies in an oiled griddle or basket for about 20-25 minutes until crispy-ish.


Make a space in the center of the vegetables and add the sausage pieces, cooking them about 10-12 minutes or until cooked through.


Toss together and serve with rice or couscous.
Makes 4 servings.
