I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Grilled Pork Loin

Marinating the pork for a few hours lets it absorb all the wonderful flavours it's soaking in. Then cooking up the remaining marinade gives you a fabulous serving sauce! 

1 3/4 lb pork loin

2 tbsps ketchup

2 tbsps Dijon mustard

2 tbsps soy sauce

2 tbsps olive oil

3 tbsps apple cider vinegar

1 tsp dry thyme

1/4 tsp black pepper

1/4 tsp celery seed

1/4 cup brown sugar

Mix everything together except the brown sugar. Place in a ziplock bag with the pork and refrigerate at least 2 hours or overnight. When ready to cook, remove the meat from the bag and pour the marinade into a saucepan. Add the brown sugar to the pan and bring to a boil for 1 minute, then simmer for 10 minutes. Set aside. Grill the pork loin at 350°F for 15 minutes, turning over once. Next, move the pork to indirect heat for another 15 minutes. Using 1/2 the sauce, baste the meat and grill 5 more minutes. The internal temperature should read 145°F. Let rest 10 minutes then slice and serve with the rest of the sauce. Serves 4

Confetti Pork Patties

Colourful diced (confetti) veggies add moisture and crunch to these pork and cheese protein patties.

Ingredients:

1 lb ground pork

1/2 red pepper, finely diced

1/4 cup onion, finely diced

1/3 cup kernel corn

1/3 cup kidney or black beans

1 tsp ground coriander

 3/4 cup shredded jalapeño or Mexican cheddar cheese

1 egg

1/3 cup Panko

some chopped kale or spinach 

spray oil

salsa to serve 

Combine the pork with everything except the spray oil and salsa. Form into 6 patties. Place on a lined baking sheet and refrigerate for at least 30 minutes. Then spray cooking oil on tops and bake at 400°F for 20-25 minutes. Broil 2 minutes for a nice golden top. Internal temperature should read 160°F when done. Serve with salsa and vegetable sides or in a burger bun. Serves 6

Slow Cooker Pork Stew

Just set it all up in a few minutes and come home to meltingly tender pork and flavourful vegetables in a satisfying one pot meal.

Ingredients:

1 1/4 lb pork shoulder, cubed

1 tbsp flour

1 tbsp vegetable oil

1 onion, quartered

3 tsps minced garlic

2 carrots, diced

5 or 6 mushrooms, halved

1 lb potatoes, cubed

1/2 cup edamame (or peas)

2 cups beef broth

1 tbsp tomato paste

1 bay leaf

salt and pepper to taste

1 tsp smoked paprika

1/2 tsp chili powder

1/2 tsp celery seed

1 tbsp cornstarch

1 tbsp cold water

Toss pork cubes with flour and place in the bottom of the crock pot. Top with the vegetables (except the edamame). Pour in the broth, tomato paste and add the seasonings. Cook on low for 6-8 hours. In the last 30 minutes make a slurry with the cornstarch and cold water and add to the stew along with the edamame. Remove the bay leaf and serve. Serves 3-4

Greek Style Meatballs

It's not normal how good these meatballs are! From the red onion and garlic to the seasonings, feta and lemon zest... these meatballs completely satisfy! 

Ingredients:

1 lb ground pork

1/2 cup crumbled feta

1/4 cup finely chopped red onion

3 tsps minced garlic

1 tbsp dry parsley

1 tbsp dry oregano

1/2 tsp ground cumin

salt and pepper to taste

1/4 cup Panko

1 egg, beaten

zest of 1/2 lemon

Serve with lemon slices, diced cucumber and tomato and tzatziki sauce.

Combine the pork, feta, red onion, garlic, parsley, oregano, cumin, salt and pepper. Then add the Panko, egg and zest. Lightly oil hands and form meat into 1 1/2" balls. You should get about 15. Bake on a parchment lined baking sheet at 400°F for 18-20 minutes. The internal temperature of the meatballs should read 160°F when done. Serves 4

Sausages, Apples and Potatoes

Just right for this cool spring day. A one pot meal that's hearty with a touch of sweetness.

Ingredients:
1/3-1/2 lb uncooked sausages cut in 2" pieces (I used bacon cheddar flavour)
2 tbsps olive oil, divided 
3 or 4 green onions, sliced 
2 medium potatoes, peeled and cubed 
2 small apples, cut in wedges
1/2 bell pepper, diced 
1 medium onion, diced 
2 tsps minced garlic 
1/2 tsp cinnamon 
1/2 tsp sage
1 cup chicken broth 

In a large saucepan heat 1 tbsp olive oil to medium and cook the sausages 5-6 minutes.  Remove to a plate. Reduce heat to medium low and add 1 tbsp olive to the pan along with the onion, potatoes and bell pepper. Cook 8-10 minutes then add the garlic for 1 minute. Add green onions, cinnamon and sage. Return the sausages to the pan and add the apples and broth. Cover for 10 minutes then stir and cook another 5 minutes.  Check potatoes and apples for tenderness and cook a little longer if needed.  Serves 2

Creamy Pork and Mushrooms

Melt in your mouth morsels of tender pork loin in a creamy, buttery mushroom sauce.

Ingredients:

1 lb thinly sliced pork loin

2 tbsps minced garlic

1 tbsp olive oil

1 tbsp butter

1 cup 35% cream

1 1/2 cups shredded mozzarella

2 cups sliced mushrooms

salt and pepper to taste

fresh parsley to garnish

Heat olive oil and butter in a large skillet to medium high heat. Season the pork with salt and pepper then brown until cooked through, about 3 minutes. Add garlic for 1 minute then add the mushrooms cooking 3-5 minutes. Lower the heat to medium and pour in the cream de-glazing the pan as you stir. Heat through, simmering for 3-4 minutes. Remove skillet from heat and top with mozzarella. Cover 2-3 minutes to melt the cheese then serve with fresh chopped parsley. Serves 2-3

Brown Sugar Air Fryer Pork Roast

This air fryer pork roast has a caramelized crust that locks in a tender interior and is enhanced with a saucy sweet gravy. 

Ingredients:

2 1/4 lb boneless pork loin roast

2 tbsps finely chopped onion 

1 tbsp brown sugar

1 tbsp smoked paprika

1 tsp ground mustard

1 tsp minced dry onion

1 tsp garlic powder

1/4 tsp cayenne 

1/4 tsp turmeric 

1 tbsp honey

1 tbsp olive oil 

salt and pepper to taste 

1 cup chicken broth

1 1/2 tbsps cornstarch

2 tbsps cold water

salt and pepper (or Mtl steak spice) 

Score through the fat of the pork loin then stuff the crevices with chopped onion. Mix the ingredients from brown sugar to salt and pepper together. Reserve 1 tsp of the mix for later. Spread the rest all over the pork. Cover with plastic wrap and refrigerate for 3 hours. Preheat air fryer at 360°F for 5 minutes. Unwrap meat and place in air fryer. Roast for 40 minutes or until internal temperature reaches 145°F. Let the pork rest for 5 minutes before slicing. While it rests, make the sauce. Add broth to a saucepan along with the reserved marinade paste. Whisk together and add any juices accumulated in the air fryer and on the plate where the roast is resting. Simmer together for 5 minutes. Mix the cornstarch and cold water together then whisk into the sauce. Simmer a couple of minutes to slightly thicken. Add salt and pepper or Montreal steak spice if desired. Serves 4

Sausage Cabbage Skillet

Here's a quick and nutritious dinner for two! 

Ingredients:

1/2 lb Italian sausage, casings removed

1 tsp olive oil

2 cups chopped cabbage

1 small onion, diced

2 celery stalks, sliced

1 yellow bell pepper, diced

3 green onions, sliced and separated white and green

a handful of greens (spinach or kale)

1/4 cup salsa or tomato sauce

1/4 cup water 

Heat oil in a skillet to medium and brown the sausage meat, breaking it up until no pink remains, 3-5 minutes. Add onion, celery and bell pepper and stir fry 4-5 minutes. Then add the cabbage and white slices of green onion. Cook for 5 minutes. Add the salsa or tomato sauce, water and greens. Bring to a boil then reduce heat to medium low, cover and cook 5-10 minutes. Serve topped with green slices of green onion. Serves 2-3

Asian Garlic Ribs

Mouthwatering pork garlic ribs are oven baked with meat that comes right off the bone! These ribs are a little time consuming as they do need to marinate overnight but are well worth your time!

Ingredients:

7 lbs (2 racks) pork ribs

3 - 341 ml (12 oz) jars garlic spare rib sauce (I use VH sauce)

3 tbsps ketchup

2 tbsps hoisin

1 1/2 tsps 5 spice powder 

1/4 cup honey 

First, and most importantly, remove the membrane from the bone side of the ribs. Peel off a small edge with a knife then grab it with a paper towel. It should come off in mostly one piece. This allows a more tender finished product. Take one jar of spare rib sauce and add ketchup, hoisin and 5 spice powder. Cover the ribs with this sauce and rub it in, then cover and refrigerate overnight. To cook, preheat oven to 375°F, line baking sheets with foil and place a rack on top. Lay the ribs bone side up on the rack and add water to the pan below. Roast for 30 minutes. Mix the second jar of sauce with the honey in a small saucepan and simmer to combine. Set aside. Take the ribs out of the oven and turn them bone side down. Add more water to the pan below if needed and return the ribs to the oven for 30 minutes more. Now cover the pans with foil and place them back in the oven for 45-60 minutes. Check the water part way through. Now uncover the pans, bone side up and baste with the sauce and honey mixture, roasting 10 minutes. Flip them over and baste again roasting another 10 minutes. Rest 10-15 minutes before serving. If making ahead of time, cut into pieces if you like, and cover with foil to refrigerate. When ready to have, bring to room temperature, pour half to all of the third jar of sauce over the ribs and reheat covered for about 15 minutes. Serves 8-10

Savory Meaty Asian Noodles

For this first day of the Lunar New Year here's a simple yet satisfying dish featuring long noodles to represent longevity. 


12 oz your choice of noodles (yi mien, fettuccini, spaghetti)

1 tsp sesame oil 

1/4 cup reserved pasta water

1 lb ground meat (chicken, beef or pork)

1 tbsp vegetable oil

1-2 tbsps minced garlic

1 tbsp minced ginger

3 green onions, sliced and divided white and green

1 small onion, diced

1/3 cup soy sauce

1/4 cup water

1 tbsp hoisin sauce

2 tbsps brown sugar

1 tbsp rice vinegar

1 tbsp cornstarch

2 tbsps cold water

garnish with sesame seeds, green onion slices, red pepper flakes

Cook noodles then reserve 1/4 cup of the pasta water and drain. Rinse in cold water then toss with sesame oil. Set aside. Mix the soy sauce, water, hoisin sauce, brown sugar and rice vinegar together for the sauce and set aside. Heat vegetable oil in a wok or large skillet and brown the meat 5-7 minutes. Remove excess liquid from the pan then make a hollow in the center of the meat and add the diced onion, white slices of green onion, garlic and ginger. Leave for 30-60 seconds before mixing together with the meat. Pour in the sauce and bring to a boil 1-2 minutes. Next make a slurry with the cornstarch and 2 tbsp cold water, add to the pan and simmer 1-2 minutes. Toss in the cooked noodles and reserved pasta water and heat through. Plate and garnish to your liking. Makes 4 servings.

Pork Meatball Stew

This comforting and economical stew is made with ground pork and a savory mix of vegetables. Served here over tender pappardelle noodles but would go equally well with mashed potatoes!

Ingredients:

Meatballs: 

1 lb ground pork

1/4 cup finely chopped onion

1/4 tsp minced ginger

1/4 tsp dry mustard

2 tsps Worcestershire sauce

salt and pepper to taste

1-2 tbsps flour

1 tbsp butter

1 tbsp olive oil 

Stew:

2 tbsps olive

1 large onion cut in chunks (or 6-7 small whole ones)

1 cup diced turnip

1 cup diced or thick sliced carrots

4 tsps minced garlic

900ml (about 4 cups) beef broth

1 bay leaf

1 tsp savory

1 tsp dry thyme

1 1/2 cups spinach, roughly chopped

1 1/2 cups small whole mushrooms

1 tbsp flour 

In a bowl combine the pork, onion, ginger, mustard, Worcestershire sauce, salt and pepper together and form into 1" balls. Roll in flour then brown in a skillet in hot butter and olive oil for about 5 minutes. Remove from pan and set aside. They will finish cooking in the stew. To the same pan add 2 tbsps olive oil and the whole onions, turnip, carrots, mushrooms, garlic and seasonings. Add 1 cup of the broth and de-glaze the pan then add the rest of the broth and bring to a boil. Cover and simmer for 45 minutes. Return the meatballs, remove the bay leaf and add the spinach. After 1 minute take 1/2 cup of broth from the pan, stir in 1 tbsp flour and whisk into the stew. Cook 2 minutes. Makes 4 servings.
