I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Cheesy Everything Bagel Mashed Potatoes

Creamy make ahead mashed potatoes with a fun bagel flavour! 

Ingredients:

2 1/2 lbs (about 7 cups) Yukon gold potatoes cut in 1"cubes

900 ml (about 4 cups) chicken broth

1 - 10 1/2 oz can condensed cheddar cheese soup

1/2 cup cream cheese, at room temperature

1 1/2 cups plain Panko

2 tbsps butter, melted

1 - 2 tbsps Everything Bagel seasoning

salt and pepper to taste

 

Heat potatoes and broth together, bring to a boil then simmer for 10 minutes or until tender. Reserve 1/4 cup of the broth for this recipe then drain off the rest of the broth and keep for another use. Mash the potatoes with cheddar cheese soup, cream cheese, 1/4 cup broth, salt and pepper. Spoon into an oiled 9 X 13" baking dish. Stir Panko, butter and seasoning together and sprinkle on top. Bake at 375°F for 25 minutes. This can be made up to 3 days in advance. Just keep it covered and refrigerated before baking and only top with Panko etc right before going into the oven. Serves 12

Cheesy Potato Carrot Smileys

These Cheesy Potato Carrot Smileys were a hit with this little sweetheart! We sent him home with the rest and his mom said "What the heck did you put in those smileys? He's eating them like a crackhead!" Haha! Big flex!  

Ingredients:

3/4 - 1 cup shredded cheddar cheese

1/2 lb (4 small) potatoes

2 medium carrots

1 tbsp butter

2 tbsps cornstarch

1/4 tsp dry minced onion

1/4 tsp garlic powder 

Boil or steam the potatoes and carrots until tender then mash all the ingredients together. Use enough cornstarch to form a dough consistency. Take 1 heaping tablespoon of dough and roll out between two pieces of plastic or waxed paper to 1/4" thick. Use a dusting of cornstarch if it's sticky. Use a glass or round cutter for the circles then poke a straw in for eyes and swipe a spoon in for a smile. Or three straw holes if you want to make "boo" faces for Halloween. Line a baking sheet with parchment paper and lightly spray with cooking oil. Place the smileys on the pan leaving space as they may spread depending on your consistency. Brush with a little olive oil and bake at 375°F for 15-18 minutes. You may need to re-form the face a little when the smileys come out of the oven and are still warm. Makes 10-12

Melting Sweet Potatoes

These caramelized potatoes will melt in your mouth with a crisp, sweet exterior that are velvety, tender inside. Pair them with just about anything from turkey, to pork, to a juicy steak! This recipe serves 2 people but can easily be doubled or tripled.

Ingredients:

1 large sweet potato (about 3/4 lb) sliced in 1" rounds, unpeeled

1 tbsp butter, melted

1 tbsp olive oil

salt and pepper to taste

1/2 cup beef broth

1 1/2 tsps honey

1 tsp sweet chili oil

2 garlic cloves, slivered 

Preheat the oven to 500°F. Combine the melted butter, olive oil, salt and pepper in a bowl then add the potato slices and mix to coat. Place the slices in a 9 X 9" metal baking pan (not glass), making sure there is space between each slice, and drizzle any remaining oil/butter on top. Roast for 12-15 minutes then flip them over and return to the oven for another 12-15 minutes. Whisk the broth, honey and sweet chili oil together and pour over the sweet potato slices. Sprinkle the garlic slivers around and back to the oven for yet another 12-15 minutes or until golden, tender and just a little bit charred on the edges. Serves 2

Loaded Mediterranean Potatoes

Super easy to make using frozen fries as a starting point then adding garden fresh cherry tomatoes and lots of Mediterranean flavours. Bye bye boring fries! 

Ingredients:

12 oz (340g) frozen fries (we used wedge cut here)

1 red onion, halved and sliced

1 tbsp olive oil

1 tbsp lemon zest

1 tsp dry oregano

1 tsp dry parsley

1 tsp garlic powder

salt and pepper to taste

16 cherry tomatoes

24 pitted black olives

3 oz (100g) feta, crumbled

handful of fresh parsley

Toss onion slices and fries together with olive oil in a roasting pan or baking sheet. Combine the lemon zest, oregano, parsley, garlic powder, salt and pepper and add. Roast at 425°F for 10 minutes. Then add the olives and tomatoes and return to the oven for 25-30 minutes, stirring halfway through. Top with feta and chopped fresh parsley and plate. Serves 4

Air Fryer Mini Potatoes

This little two serving potato recipe is quick and easy. Customize with your favourite seasonings and flavoured oils. 

Ingredients:

3/4 lb mini potatoes (russet, goldens or red)

1 tbsp olive oil (spicy, if you've got it!)

1/2 tsp Italian seasoning

1/2 tsp garlic powder

salt and pepper to taste

Coat the potatoes in oil then toss in the seasonings. Air fry at 400°F for 10 minutes, roll them around and return to fry 8-10 minutes longer.

Serves 2

Slow Cooker Bone In Chicken and Potatoes

If you liked my One Pot Chicken and Rice recipe you'll love this go-to homestyle meat and potatoes meal. You can also sub the chicken breasts for thighs. Just make sure to check for doneness on the early side for breasts and maybe a little longer for thighs.

Ingredients:
4 bone-in chicken breasts 
1/4 tsp basil
1/4 tsp oregano 
1/4 tsp rosemary 
1/4 tsp thyme
Salt and pepper to taste 
1 tbsp butter
1 lb potatoes, quartered 
1 tbsp olive oil
2 tsps garlic powder
2-4 small onions, whole (optional)
1 bell pepper (optional)
Add butter to a skillet and season chicken with basil, oregano, rosemary, thyme, salt and pepper. Brown chicken on each side 3-4 minutes. Set aside. 
Toss potatoes with olive oil then add garlic powder, salt and pepper. Spray oil on the inside of the slow cooker then dump in the potatoes. Top the potatoes with the chicken and tuck in the onions and bell pepper if using. Cover and slow cook on low for 7-8 hours or on high for 3-4 hours until internal temperature of the chicken reads 165°F.
Serves 4

Golden Air Fryer Fries

Perfectly golden homestyle fries for two. So good we might have to make another batch!

Ingredients:
2 medium Yukon gold potatoes, unpeeled
1-2 Tbsps vegetable oil
Your favourite seasonings like salt, garlic powder, oregano, smoked paprika, etc.
Start by washing and brushing the potatoes clean. Then cut into 1/3 - 1/4" thick fries. Dump them in a bowl and fill with water. Drain and rinse until the water is clear to remove any excess starch. Then, no need to dry then, just remove from the water and place in the air fryer basket. They may be a little overlapped, that's ok. Air fry at 390°F for 10 minutes. Now transfer the fries to a bowl and toss with 1-2 tbsps of vegetable oil and your choice of seasonings. Return to the air fryer for another 7-9 minutes at 390°F. That's it! Ready for ketchup, Sriracha, mayo or whatever you like to dip them in!
Makes 2 servings.

Cheesy Make Ahead Mashed Potatoes

Cheesy and easy! What's not to like? And bonus points for being able to make it ahead of time! (Sorry, but mashed potatoes don't make for pretty pictures) 

Ingredients:

 6 Yukon gold potatoes, peeled and quartered

1 - 8 oz container cream cheese, at room temperature

1 cup shredded cheddar

1/2 cup sour cream

1/3 cup chopped onion

1 egg

2 tsps salt

1/2 tsp pepper

more cheddar to top

Boil potatoes for about 20 minutes or until tender, then drain off the water. Mash the potatoes then add everything else together and mash into the potatoes. Grease an 8 X 8" baking dish and dollop the potatoes in. Smooth out evenly. Cover and bake at 350°F for 40-45 minutes. Then remove from the oven and top with more shredded cheddar. Cover with foil and let melt or uncover and broil to melt and slightly brown.

If you make it ahead, once the baking dish is filled cover it and refrigerate. When you want to cook  it bring it back to room temperature (out of the fridge around 30 minutes) then follow the rest of the directions. 

Serves 10

Cowboy Beans and Potatoes

Don't let it's plain appearance fool you. This dish is deceivingly delicious! And since it's got Italian sausage in it maybe it should be call Spaghetti Western instead of Cowboy Beans!🤠


Ingredients:
2 hot Italian sausages, casings removed and broken up
1 onion, cut in wedges 
4 small potatoes, cut in 1" cubes
1 tsp olive oil
2 cups canned diced tomatoes
1 tbsp tomato paste 
1 tsp ground cumin
1 tsp smoked paprika
19 oz (540 ml) canned mixed beans, drained (red kidney, chick peas, Romano and Northern white beans)
Toss the crumbled sausages, onion wedges, potato cubes and olive oil together and spread out in an oiled 10 X 10" baking dish. Bake in 425°F oven for 25 minutes or until you can pierce the potatoes with a fork.
Add the diced tomatoes, tomato paste, ground cumin, smoked paprika and mixed beans (you could just pick one kind of bean but this mix was interesting).
Return the dish to the oven for another 30 minutes until piping hot.
Makes 2-3 servings

Garlic Shrimp and Potato Sheet Pan Dinner

Cubes of potato and plump shrimp share a garlic spiced coating in this easy sheet pan quickie!  

Ingredients:

2 cups diced potatoes

1 small onion, sliced

2 tbsps olive oil (1 for potatoes, 1 for shrimp)

1 tsp garlic powder, divided

1 tsp smoked paprika, divided

1 tsp ground cumin, divided

2/3 cup diced red bell pepper

6 oz (160g) 51-70 size shrimp

1 tsp minced fresh garlic

1/4 tsp lemon zest

lemon to serve

Dice the potatoes into 1" cubes and dry them well. Toss with 1 tbsp olive oil and 1/2 tsp each... garlic powder, smoked paprika and ground cumin along with the sliced onion.

Line a baking sheet with a silicone mat or parchment paper. Spread the potatoes and onions out in a single layer and roast in a 425°F oven for 20 minutes.

Toss the shrimp and red bell pepper with 1 tbsp oil, fresh minced garlic, lemon zest and 1/2 tsp each... garlic powder, smoked paprika and ground cumin.

Push the potatoes to one side of the pan, add the shrimp and pepper to the other side and return to the oven for 6 minutes or until the shrimp are pink and opaque.

Mix everything together and serve with lemon wedges.

Serves 2

Spicy Smashed Potatoes

These spicy spuds are crisp on the outside and fluffy on the inside. Spiced just right with chili crisp oil, but feel free to drizzle more on the finished potatoes if that's your jam!

Ingredients:

 6 small new potatoes

1-2 tsps olive oil

1/8 cup butter, melted

1 tbsp honey

2 tsps chili crisp oil

1/2 tsp dry thyme 

Extra honey for drizzling (and extra chili crisp oil too if you like them extra spicy!)

Preheat oven to 425°F

Clean and dry the potatoes then brush with olive oil and poke the tops with a knife. Place on baking sheet and roast at 425°F for 30-40 minutes or until fork tender. Press down, or smash, with a fork just until they crack opened.

Combine the melted butter, honey, chili crisp oil and thyme and spoon onto tops of potatoes. Bake another 10 minutes. 

Drizzle with honey (and chili crisp oil) to serve.

Serves 3-6

Honey Roasted New Potatoes

These honey roasted new potatoes are a super simple make ahead side dish for just about any entrée. Only slightly sweet and a little bit piquant. 

Ingredients:

3 lbs new, thin skinned potatoes

3 tbsps olive oil, divided

1/2 cup chicken broth

2 tbsps honey

2 tsps old fashioned grainy dijon

2 tsps garlic powder

2 tsps dry minced onion or onion powder

1 tsp dry oregano

1 tsp smoked paprika

salt and pepper to taste

1 tsp cornstarch

2 tsps cold broth or water

Using small potatoes of similar size, toss with 2 tbsps olive oil. Roast in a single layer on a baking sheet in a 450°F oven for 30-40 minutes or until the potatoes are fork tender.

While they roast mix 1 tbsp olive oil, broth, honey, dijon, garlic powder, minced onion, oregano, smoked paprika, salt and pepper together in a small saucepan. Cook on medium high heat for 2-3 minutes. Whisk the cornstarch and cold water together and whisk into the glaze, cooking for 1 minute to slightly thicken. Remove from heat.

Toss the glaze with the roasted potatoes and serve right away or place in a baking dish ready for re-heating when needed.

One Pan Pork Chops and Potatoes

This one pan rustic pork and potato dinner gives all the comfort food feels!

Ingredients:

2 tbsps avocado or vegetable oil

2 large onions, sliced

4 pork chops

4 potatoes, sliced about 1/4" thick

1 tsp Loney's chicken bouillon powder

1 cup cold water

pepper and garlic powder to taste

First choose a pan that will fit your pork chops in a single layer. Then heat oil in pan to medium high heat and brown the pork chops on both sides. Remove to a plate. Add the sliced onions to the pan and cook until softened. Mix the chicken bouillon powder and water then pour into the pan and mix with the onions to de-glaze the pan.

Place a few potato slices over onions. Lay the pork chops on top of the onions and potatoes then pepper to taste. (No need for salt, it's in the bouillon powder) Layer the remaining potatoes on top and sprinkle with garlic powder. 

Cover and cook on medium low heat for 30 minutes. Simple and delicious!
