I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Ramekin Apple Cakes

Satisfy your cake craving! These buttery little cakes with sweet apple in every bite are perfect on their own or dress them up with a dusting of icing sugar, whipped cream or a scoop of vanilla ice cream.

Ingredients:

 Apple Pie Filling:

3 medium apples, chopped

2 tbsps water

3 tbsps sugar

1 tsp cinnamon

1 tbsp cornstarch + 1 tbsp water

(or 1 cup canned pie filling but homemade is best!)

 

 Cake:

1 1/2 cups flour

1/2 cup sugar

2 tsps baking powder

1 tsp cinnamon

1 cup milk

1/2 cup butter, melted

1 tsp vanilla

 

If not using store bought pie filling, just add the apples, 2 tbsps water, sugar and cinnamon to a saucepan. Bring to a boil, then simmer for about 15 minutes. Stir the cornstarch and 1 tbsp water together and add to the pan. Cook 2 minutes to thicken.

Butter 3 ramekins, or as in this case, 2 ramekins and an oven safe pudding bowl and set aside. Combine the flour, sugar, baking powder and cinnamon. Add the milk, melted butter and vanilla and stir until just combined. Spoon about 3 tablespoons of batter into each dish. Then divide the apple pie filling amongst each and add the remaining batter on top.

Bake in a 350°F oven for 30 minutes.
Eat warm right out of the ramekin or cool and turn out to slice like this one baked in the pudding bowl.
