I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Crispy Air Fryer Fish and Chips

These panko crusted fillets have a super crispy coating and are way healthier than deep fried fish and chips!

Ingredients:
2 russet or Yukon gold potatoes
2 tbsps olive oil
salt and pepper to taste
3/4 lb (400g) sole or other white fish like cod
1/4 - 1/2 cup pancake mix (store bought or homemade)
1/4 cup milk
1 tsp vinegar
1 egg
3/4 - 1 cup Panko crumbs
1/4 tsp salt
1 tsp Old Bay seasoning
1/2 tsp smoked paprika
cooking oil spray

Scrub the potatoes then cut into thin fries. Soak in cold water for 20-30 minutes. Drain and pat dry. Toss with 2 tbsps olive oil and spread in an even layer in the air fryer basket. Salt and pepper to taste. Air fry at 390°F for 10 minutes, shake around then return to fry for another 8 - 10 minutes depending on the thickness of your fries. Remove to a dish a keep warm.

While the potatoes are cooking prepare the fish. Place pancake mix in a shallow bowl or plate. In a bowl mix milk with vinegar and let sit 2 minutes then add the egg and beat together. In a plastic bag or bowl mix the Panko with all the seasonings.
Dab the fish dry with paper towels then dip in egg, coat in pancake mix, dip in egg again then into the Panko to completely coat. Continue until all the pieces of fish are breaded and placed in the air fryer basket.

Generously spray the fish with cooking oil and air fry at 390°F for 12 minute, again the time may vary depending on the thickness of your fish. Check that it flakes with a fork for doneness. Return the fries to the basket and along with the fish return to the oven for 2-3 minutes.
Serve with lemon wedges
