I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Italian Sausage Scalloped Potatoes

 Ok, so it's not pretty


Ingredients:
500g (1 lb) hot or mild Italian or Chorizo sausage meat
1 tbsp olive oil
1 onion, thinly sliced
4 medium potatoes, cut 1/8" thick
1/4 cup butter
1/4 cup flour
2 cups milk
salt and pepper to taste
1 tsp oregano, divided
3/4 cup shredded cheddar
2 tbsps parmesan cheese

Use loose sausage meat or remove casings from sausages and cook in olive oil on medium high heat for 3-5 minutes. Set aside.
Place potato slices in a large pot of water and bring to a boil. Simmer 5 minutes then drain. 

Oil an 8 X 8 X 4" baking dish and start layering onions, potatoes and sausage, onions, potatoes and sausage...

In a saucepan, melt the butter and whisk in the flour. Cook 1 minute, then whisk in the milk. Heat and whisk for about 2 minutes or until thickened. Add salt, pepper and 1/2 tsp oregano. Pour into the baking dish.

Top with cheeses and the remaining 1/2 tsp oregano and bake in a 375°F oven for 35-40 minutes or until the fork test says the potatoes are tender.

Sit 10 minutes before cutting to serve.

Serves 4 as a meal or 6 as a side.
