I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

One Pan White Fish and Rice

This meal has it all!

It cooks in one pan, it's a healthy meal, cooks in less than 30 minutes and it's super colourful!


Ingredients:
400 g white fish fillets (Basa this time)
2 tbsps olive oil
lemon pepper to taste

Rice:
3/4 cup white or basmati rice
1/2 cup diced red pepper
12 asparagus spears, cut in 1 1/2" pieces
2 tbsps olive oil
1 1/2 cups water
salt and pepper to taste

2 tbsps capers with some of the brine
1 tbsp olive oil
a few fresh basil leaves
2 radishes, thinly sliced
salt and pepper to taste

Garnish with lemon slices, basil leaves, fresh parsley, nasturtium or any other edible flowers.

First, pat the fish fillets dry with a paper towel. Then brush 2 tbsps of olive oil on both sides. season with lemon pepper. Set aside.


In a large skillet heat 2 tbsps olive oil on medium, then add the rice and red pepper. Stir to coat. Add water, salt and pepper and bring to a boil. Then reduce heat and simmer 4-5 minutes.
Toss the capers/brine, asparagus, 1 tbsp olive oil, 1 tbsp fresh chopped basil, salt and pepper together.
Nestle the fish fillets into the rice, top with the capers etc. and add sliced radishes.


Cover and simmer 10 minutes on low/medium low. After 10 minutes remove the cover and cook 2-3 minutes to reduce liquid.


Using a large spatula, lift fish fillet and rice out of the skillet and plate with more colourful garnishes.
