I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Crispy Skillet Potatoes

Potatoes thinly sliced, the thinner the better, for the crispiest, chippiest skillet potatoes ever!


Ingredients:
4 or 5 medium potatoes
olive oil
1 tsp garlic powder
1 tsp oregano
1/2 tsp basil
1/4 cup butter
2 tbsps grated parmesan
salt and pepper

10" cast iron skillet

Scrub the potatoes clean, then dry them and slice thinly. Use a mandolin if you have one so you'll get thin and uniform slices. Grease the skillet well with olive oil, then arrange the slices vertically and loosely around the pan. Sprinkle garlic powder, oregano and basil on top, dot with butter and salt and pepper. Cover with foil and into a 375°F oven for 1 hour.


After 1 hour remove the foil, add the parmesan and return to the oven uncovered for 15-20 minutes.


If you want you can give the potatoes a light olive oil spray and broil 1-2 minutes at the end for extra crispiness.
