I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Garlic Grilled Veggies with Pineapple

Add a burst of flavour to any meal with these marinated gems!
They taste good, they smell good and they look good too!
Ingredients:
1 medium yellow zucchini, thick sliced
1 small onion
1 small red pepper
2 pineapple rings, cut in chunks

2-3 tsps minced garlic
juice and zest from 1/2 lemon
1/4 cup olive oil
1 tbsp white wine vinegar
1/2 tsp red pepper flakes
salt and pepper to taste
1/2 tsp dry oregano
2 tbsps fresh chopped mint
1 tbsp fresh chopped lemon basil

Whisk the marinade ingredients together and toss with the veggies and pineapple. Marinate in the fridge at least 1 hour, preferably 8, for the flavours to really be absorbed.

You can skewer the vegetables for grilling or barbecue them in a grill basket.
Either way you choose they will take 4-5 minutes per side, turning the skewers or tossing in the basket.

The aroma is outstanding!
