I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Creamy Kale Chicken

This Tuscan style chicken uses trendy (it seems) kale in place of the usual spinach. Only minutes to prepare then it all goes in the oven to make a delicious meal.
Ingredients:
4 chicken legs, split
2 tbsps butter
2 tbsps flour
1 cup milk
1/2 cup chicken broth
salt and pepper 
2 kale leaves, chopped
4 halves sun dried tomatoes in oil, chopped
1 tsp garlic powder
1 tsp oregano
1 tsp basil

Starting with the white sauce, melt the butter in a saucepan and add the flour. Whisk 1 minute then add the milk and chicken broth. Add salt and pepper to taste. Continue whisking over medium heat until the sauce begins to thicken. 

Add the kale and sun dried tomatoes.
Spray a 13 X 9" baking dish with cooking oil and pour the sauce in. Lay the chicken pieces on top.
Generously sprinkle with garlic powder, oregano and basil.
Cover with foil and bake at 400°F for 30 minutes.
Then uncover, spray with a little olive oil, and return to the oven for 20-25 minutes longer. Broil 3-4 minutes if you want to golden it up more.
Great served with rice or pasta!
