I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Grilled Pickle Chicken

Simple recipes are really the best eh?

Using different pickle juices will give you a different flavour every time and this brine will always give you the most juicy chicken breasts.

Ingredients:
2 boneless skinless chicken breasts
1 cup pickle juice
1 tbsp brown sugar
1 tsp herbed sea salt
1 tsp black pepper
1 tsp smoked paprika
pinch red pepper flakes
Olive oil

Combine pickle juice, brown sugar, salt and pepper, smoked paprika and red pepper flakes and marinate the chicken in the fridge overnight. I used the juice from bread and butter pickles but dill pickle juice will definitely be next up to try.

Heat your grill to medium high 375-400F 
Remove the chicken from the brine and pat dry with paper towels.

Brush with olive oil and sprinkle with more salt, pepper and smoked paprika. Oh, Old Bay seasoning would be great too! Maybe with the dill pickle juice ones next time!!


Grill on each side 8-10 minutes per side or until no pink remains and juices run clear.


That's it... simple but succulent!
