I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Pumpkin, Papaya and Mandarin Muffins

A little bit of this, a little bit of that...


Ingredients:
2 cups pumpkin purée (not pumpkin pie filling)
2 mandarin oranges, chopped
1/2 cup chopped papaya
4 eggs
1 cup vegetable oil
2  1/2 cups sugar
3 cups flour
1/2 cup whole wheat flour
2 tsps baking soda
1 tsp cinnamon
1 tsp cardamon
1 tsp salt
1 cup chocolate chips, raisins or dried cranberries

Cream the eggs, oil and sugar together in a large mixing bowl. Then add the pumpkin, papaya and mandarin oranges.



Mix the dry ingredients together and add to the wet in 3 additions.


Fold in the chocolate chips, raisins or dried cranberries.


Scoop the batter into prepared muffin tins ...


and bake at 350 F for 25 minutes.


Makes 33 medium sized muffins
