I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

One Pot Pork and Scalloped Potato Bake

With the holidays fast approaching every day seems to fly by more and more quickly. At times like these I love one pot meals that are nutritious and can be prepared with little fuss.


Ingredients:

4 bone-in pork chops, 3/4 - 1" thick
2 tbsps olive oil
1 tsp salt
1/4 tsp pepper
2 tbsps butter
2 tbsps flour
2 cups chicken broth
4 medium white potatoes, sliced thinly
1 medium sweet potato, sliced a little thicker than the white
1 medium onion, sliced
1 cup chopped spinach
paprika

Oil a deep skillet, one that will accommodate 4 pork chops without overlapping them, and layer the white potatoes, sweet potato, onion and spinach.


In a skillet lightly brown the pork chops in the olive oil then lay them on top of the spinach.


Melt the butter, and whisk in the flour, salt, pepper and broth. Pour this mixture over the pork chops and sprinkle with paprika. You can also add more salt and pepper if you like.


Cover and bake at 350F for 1 hour then uncover and return to the oven for an additional 15 minutes.




And you've got supper on the table!
