I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Whipped Vanilla Frosting

This homemade frosting is super creamy and fluffy. Use it to frost a layer cake or pipe on top of cupcakes.

Ingredients:

1 cup unsalted room temperature butter

3 1/4 cups icing sugar, sifted

1/3 cup 35% whipping cream

2 tsps vanilla extract

pinch of salt

Whisk the butter in a mixer on high 3-5 minutes until creamy. Then on medium speed add the icing sugar in 2 or 3 additions and beat until fully mixed in. Then add the cream, vanilla and salt and whip on high for a full 5 minutes. This is how it looks after 5 minutes with a whisk attachment. If you want to get rid of the bubbles and have a more smooth frosting use the flat spatula attachment for 2 more minutes.

Makes enough frosting for a 2 layer 8" cake.

Fluffy Whipped Chocolate Frosting

Fluffy and decadent and so easy to make. You'll love it! And the addition of coffee granules gives a deepness to the chocolate flavour without making it coffee tasting.

Ingredients:

3/4 cup unsalted butter, at room temperature

4 cups icing sugar, sifted

1 1/2 cups cocoa powder, sifted

2/3 cup  35% whipping cream

2 tbsps vanilla extract

pinch of salt

1 tbsp instant coffee granules

Whisk butter on low to cream then on high until light. Measure the icing sugar and the cocoa powder then sift. Add the icing sugar, cocoa, whipping cream, vanilla, salt and coffee granules. Again, start on low to combine then whip on medium high to high for 5 full minutes until fluffy. Frost your cake then refrigerate to set.

Makes enough frosting for a 2 layer 8" cake.

Lemon Buttercream Frosting

We're a chocolate obsessed family but I thought I'd change it up a little for my daughter's birthday. 

For you lemon lover's out there, this fluffy and bright fresh lemon frosting is bursting with lemony tartness!


Ingredients:
1 1/2 cups butter, at room temperature
2 tbsps fresh lemon juice
zest of 1 lemon
1/2 tsp salt
3 1/2 - 4 cups icing sugar
yellow food colouring, optional

First beat the butter on medium-low speed for 1-2 minutes. Use only room temperature butter to ensure a nice smooth frosting. Add 2 cups of icing sugar, lemon juice, zest and colour if using. Again, beat 1-2 minutes or until fluffy. Then add 1 1/2 cups icing sugar and beat until well combined.

If the frosting consistency is to thin for your liking, add more sugar. If too thick, add a dash more lemon juice. Mine was spot on 3 1/2 cups.


You will have enough frosting for a 4-layer 8' cake, a 13 X 9 cake or 24 cupcakes.


May be stored for 2 days on the counter or up to a week in the fridge.

Lemon Mascarpone Frosting

Pay no attention to my inability as a cake decorator...but you've got to try this frosting! It's spreadability is the best!


Ingredients:
1 cup butter, room temperature
8 oz mascarpone cheese, room temperature
zest of 1 lemon (or more)
1 tsp lemon juice
4 cups icing sugar

Cream together the butter and mascarpone, then mix in the zest and lemon juice.

Add the icing sugar in 1 cup at a time until smooth.

You could add a drop of yellow food colouring if you like but this light yellow was all natural.



I might try it with just 3 cups of icing sugar next time and the zest of 2 lemons because there's definitely going to be a next time!

Coffee Mocha Buttercream

Light on the cocoa, with a little coffee fix!

Ingredients:

1 cup butter, at room temperature
2  1/2 cups icing sugar
1/4 tsp vanilla extract
1  1/2 tbsps strong brewed coffee, cooled
1 tsp cocoa powder

Cube the butter and beat in a mixer until smooth.
Gradually add the icing sugar and beat until fully combined.
Add the vanilla extract and the coffee, again a little at a time so that the butter mixture can easily absorb the liquid.

Makes enough frosting for a 2-layer 8" round cake.

This one was a chocolate fudge cake which complimented the buttery frosting perfectly!

Nutella Greek Yogurt Frosting

If you love Nutella (who doesn't?) then you'll love this frosting!

1 cup marg or butter
2 cups icing sugar
3/4 cup Nutella
2 tbsps plain Greek yogurt
1 tsp vanilla
pinch salt

Cream the butter then add icing sugar by 1/2 cup increments.
Blend in the Nutella, yogurt, vanilla and salt.
If you want a thicker frosting add more icing sugar, a 1/4 cup at a time.  If you want to thin the frosting add a little more yogurt.
Make your favourite cupcakes and frost away!
