If you love Nutella (who doesn't?) then you'll love this frosting!
1 cup marg or butter
2 cups icing sugar
3/4 cup Nutella
2 tbsps plain Greek yogurt
1 tsp vanilla
pinch salt
Cream the butter then add icing sugar by 1/2 cup increments.
Blend in the Nutella, yogurt, vanilla and salt.
If you want a thicker frosting add more icing sugar, a 1/4 cup at a time. If you want to thin the frosting add a little more yogurt.
Make your favourite cupcakes and frost away!

Banana Nutella "Ice Cream" Sandwiches
First day of spring, woo hoo!! It's been a long, cold winter. You deserve a treat that will get you in the mood for those hot summer days that we've been waiting for (they are coming!) And these are pretty good for you too.
3 bananas, sliced and frozen for a minimum of 60 minutes
3-4 tbsps. Nutella
1/2 tsp vanilla
18 graham crackers
Add bananas, Nutella and vanilla to food processor and process until smooth. It will look lumpy at first. Just use a spatula to fold the sides down and process again until it goes from this to this:
Line an 8 X 8" pan with 9 graham crackers, spread the mixture over top and cover with the remaining 9 crackers.
Cover with foil and freeze overnight.
Remove from freezer about 5 minutes.
Then cut and serve or freeze individually.
I melted some chocolate, put it in a ziplok baggie, snipped the end and drizzle over some of the squares. Yum!

Nutella Quinoa Breakfast Cookies
We had warm quinoa with apple for breakfast and had some leftover, so I decided to use it in a cookie recipe.
1 1/2 cups whole wheat flour
1 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup butter
1/4 cup white sugar
1/4 cup brown sugar
1/4 cup nutella
2 eggs
1 tsp vanilla
1/2 tsp almond extract
1 1/4 cup cooked quinoa (with 1/2 shredded apple)
1/2 cup coconut
1 cup chocolate chips
Mix the four dry ingredients together, set aside
Cream the next seven ingredients together. Add the dry to the wet in increments, combine well. Lastly add the quinoa, coconut and chocolate chips.
Line a baking sheet with parchment and drop heaping tablespoons of batter at least 1 inch apart.
Bake at 375F for 12-15 minutes. Makes 30
