I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Smash Burger Caesar Tacos

Light and easy fare for a hot summer night. Prep ahead of time and have supper on the table in mere minutes! 

Ingredients:

3/4 lb ground chicken

4 - 6" tortillas

1/2 tsp fresh minced garlic

1/2 tsp garlic powder

1 tsp dry oregano

1/2 tsp dry thyme

1 tbsp fresh chopped parsley

1/4 tsp salt

1/4 tsp lemon pepper or black pepper

olive oil

romaine lettuce

Caesar salad dressing

croutons 

Mix the chicken with all the seasonings. This can be done earlier in the day and refrigerated. When ready to use, spread evenly on each of the 4 tortillas. Mix torn romaine leaves with the salad dressing and set aside. Have the croutons ready either whole or crushed. Heat a griddle or frying pan to medium high and add a little olive oil. Place the tortillas meat side down and cook 3 minutes. Peek an edge to see if no pink remains then flip them over and cook for 1 minute on the tortilla side. Repeat with remaining tortillas. Then top with salad and croutons, fold like a taco and bite in!  Serves 4

Open Faced Burger Dogs

Wondering what to do with those extra hot dog buns that you're regularly left with? These burger dogs are a cinch to make and take care of those abandoned buns!


Ingredients:
1/2 lb ground beef
2 hot dog buns, split
2 green onions, finely chopped
1 tsp minced garlic
1 tsp sesame oil
1 tsp soya sauce
1 tsp hoisin sauce
1/2 tsp sugar

green onion and sesame seeds to garnish

So, easy peasy... put an oven rack 6" below broiler element and set the oven to broil. Mix everything together. Spread the meat mixture evenly over the opened bun halves. Make sure to cover all the bun, even going over the edge if you can because the meat will shrink.
Cover a baking sheet with foil and place the buns and meat on top.

Broil for 7-9 minutes or until the internal temperature of the meat is 170°F. Garnish with sesame seeds and sliced green onion. A drizzle of sriracha would go well too.

Sweet Potato, Quinoa and Black Bean Patties

If you are looking to try a meat free version of the good old meat patty, this one is as easy as can be. Filled with lots of good things that won't leave you feeling stuffed like that big old meat one would. 

1 cup mashed sweet potato
1 cup cooked quinoa
1/2 cup shredded carrots
1 cup black beans (1/2 cup whole, 1/2 cup mashed)
3/4 cup chopped onion
2 tsps ground cumin
1/4 tsp chili powder
1/2 tsp paprika
1 tsp garlic powder
1 tsp salt
1/4 tsp pepper
6-8 basil leaves, finely chopped

Just combine everything and form into patties.
Place on a parchment lined baking sheet.

Bake at 425 F for 30 minutes, flipping over halfway through.
As you can see here, I served mine with salad and creamy pasta, but you can definitely stick it in a bun and top with your favourite burger toppings.

Italian Burgers

The red wine and sundried tomatoes in this recipe give your old burger some oomph !

1  1/4 lbs ground beef
3 oz (1 cup) shredded old cheddar cheese
2 tbsps italian bread crumbs
2 tbsps dried basil
1 tbsps dried oregano
2 tbsps red wine
2 tbsps chopped sundried tomatoes
3-4 minced garlic cloves
2 tbsps of your favourite tomato sauce

Mix everything together and form into patties.  Refrigerate until ready to use.  Most beef recipes tell you to bring the meat to room temperature before cooking, but with ground beef you want to take it from the fridge right to the BBQ.

Turn up the BBQ to high.  You want to cook your burgers on direct heat.  Cook 5-6 minutes until you see juices starting to come out the top.  Resist the urge to squish 'em!
Flip them over and cook for another 3-4 minutes.  Take them off the heat and rest 5 minutes.
