Inundated with zucchinis? Freezer full of super ripe bananas? Then this recipe is for you!
Ingredients:
1/2 cup all purpose flour
1 1/2 cups whole wheat flour
1 cup oats
2 tbsps wheat germ
1 1/2 tsps baking powder
1 1/2 tsps baking soda
2 tsps cinnamon
1/2 tsp allspice
1 tsp salt
4 eggs
1 cup sugar
1/4 cup virgin coconut oil
1/2 cup applesauce
2 ripe, medium size bananas, mashed
2 tsps vanilla
2 cups shredded zucchini
1 cup raisins
Mix the two flours, oats, wheat germ, baking powder and soda, cinnamon, allspice and salt together. In a separate bowl beat the eggs, one at a time, until light. Add the sugar, coconut oil, applesauce, banana and vanilla. Stir the wet and dry ingredients together mixing just until combined. Fold in the shredded zucchini and raisins. Pour into prepared pans, either greased and floured loaf pans or paper lined muffin tins. Bake loaves at 350°F for 45-50 minutes or muffins for 22-25 minutes. Check with a cake tester for doneness.
