I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Tortellini and Spinach

Easy, cheesy tortellini! Use fresh or frozen cheese tortellini with cream cheese and mozzarella for a creamy 30 minute casserole.


Ingredients:
12 oz tortellini
3/4 cup broth (chicken, beef or veg)
4 oz cream cheese
1/2 cup milk
1 cup chopped spinach (or any greens)
1 cup shredded mozzarella
2 or 3 large mushrooms, thinly sliced
1 tbsp butter
1/2 tsp dry basil
black pepper to taste

Cook the tortellini as per package directions.
Meanwhile simmer the broth, cream cheese and milk together. 
Heat butter in frying pan and brown the sliced mushrooms.
Add the drained tortellini to the cream cheese mix along with the mushrooms and chopped greens, basil and black pepper. (I had a package of arugula, spinach, etc greens that were getting a little too old for salad so it worked perfectly for this recipe).
Simmer 4 or 5 minutes.


If you're not working with an oven safe pan then transfer the mixture to an 8 X 8" baking dish. Top with the shredded cheese.


Bake at 400°F  15-20 minutes.


Ready to serve.
