I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Baked Salmon with Lemon and Garlic

 If you like lemon you'll love this salmon recipe! Quick and easy and so flavourful!


Ingredients:

4 salmon fillets
4 tsps minced garlic

5 tbsps fresh lemon juice
zest of 1 lemon
4 tbsps olive oil
2 tbsps melted butter

3 tbsps flour
2 tbsps cornmeal
1 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp celery seed
1/4 tsp black pepper
2 tbsps vegetable oil

Dry parsley and lemon to serve


To start, place the salmon fillets on paper toweling and pat dry.

Combine the lemon juice, zest, olive oil and melted butter in a shallow bowl. In another shallow bowl mix the flour, cornmeal, paprika, cumin, celery seed and black pepper.


Take fillet and dip in the lemon juice mixture, then in the dry mix. Heat the vegetable oil in a large skillet and brown the fillets on each side 1-2 minutes. Remove to a parchment lined baking sheet. Add minced garlic to the remaining lemon juice mixture and spoon onto the fillets.


Bake in a preheated oven at 400°F for 10 minutes or until the fish flakes easily with a fork.


Serves 4


Top them off with some parsley and slices of lemon.
