I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Honey Jerk Salmon

 Ok gather up your fish haters! They won't be able to resist this one!


Ingredients:

2 tbsps extra light olive oil

4 salmon fillets

1/2 tsp pink Himalayan salt

1 tsp dried thyme 

1 tsp allspice

1/2 tsp ground ginger

1 tsp black pepper

1 tsp powdered garlic

1/4 - 1/2 tsp red pepper flakes

zest of 1/2 lemon

2 tbsps brown sugar

juice of 1/2 lemon

4 tbsps honey

4 tbsps water


First, pat the salmon fillets dry with a paper towel. Then combine everything from the salt to the brown sugar inclusive. Massage this mixture into both sides of the fish.

                                      

Add the lemon juice, spooning some onto each fillet. Marinate in the fridge for 1 hour.


Preheat oven to 350°F
In an oven proof pan (I wish mine had more shallow sides!) heat the oil to medium high. Cook the salmon for 4 minutes then gently turn them over and place in a 350°F oven for 10 minutes.

Mix the honey and water together. Bring the pan back to the stove top and pour the honey/water in.

Again cook on medium high heat until the liquid starts to bubble, then reduce to low heat and baste until fully coated, 2-3 minutes.

Serve drizzled with any remaining glaze from the pan and some of your favourite sides. Here I've got rice and peas along with a Sweet Kale Salad (link to the recipe below)
