I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Beef, Carrot and Sweet Potato Stir Fry

Yummy isn't always pretty.

3/4 lb round steak, cut in thin strips
1/2 - 1 jalapeno, minced
2 garlic cloves, minced
2 tbsps olive oil, divided

2 or 3 carrots, sliced
1 small sweet potato, thinly sliced
1 inch fresh ginger, shredded or minced
2 green onions, sliced
1 cup kale, chopped
1/4 cup fresh parsley, chopped
1 tsp cumin
1/2 tsp chili powder
salt and pepper to taste
1 tbsp sesame seeds

Mix jalapeno, garlic and 1 tbsp olive oil and massage into beef strips. Marinate 1 hour in fridge.

In a large skillet or wok heat 1 tbsp olive oil and add the meat. Toss until no pink remains then remove to a plate.

To the same pan add the sweet potato, carrots and green onions and cook 5-7 minutes.

Return the meat to the pan and add everything else.
Heat through for 2-3 minutes and serve.

Makes 4 servings
