I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Honey Pork Loin with Thyme

And this was the roast pork that made it to our New Year's Day plate alongside Oven Roasted Parmesan Brussels Sprouts, Seared Scallops with Kale and some garlic shrimp. 


Ingredients:

1  1/2 lb boneless pork loin
3-4 tsp fresh thyme leaves (more if you like)
herbed sea salt and black pepper to taste
4 tbsps butter
2 tbsps honey
1/2 cup water

Season the pork  with sea salt, thyme and pepper.

Melt butter and honey together over medium heat then brown each side of the pork for about 5 minutes. 



Once browned spoon any remaining caramelized sauce on top of the pork and add a few more sprigs of thyme. 

Place uncovered in a 375F oven for 15-20 minutes. Remove and keep warm.



Add water to the pan and simmer 5 minutes for a quick au jus. Isn't it lovely?

Serves 4-6
