I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Shrimp with Zucchini Noodles

Lighten up with this low carb dish made in one pan in less than 30 minutes with just enough spicy red pepper flakes and garlic to give it a kick!

Ingredients:

1 tsp tahini paste

2 tsps sesame oil

1/4 cup diced onion

1/2 cup diced red bell pepper 

2 tbsps minced garlic

1 lb raw shrimp (I used size 36/45)

1 tbsp dry minced onion

1/2 tsp salt

1/2 tsp red pepper flakes

1/4 tsp black pepper

1 tsp lemon zest

3 tbsps lemon juice

1/4 cup chicken broth

1 lb zucchini noodles, ready made or make your own

1/4 cup parmesan 

 

Heat tahini and and sesame oil in a large frying pan to medium high then add the onion and red pepper sautéing for 5 minutes. Add the garlic and cook about 30 seconds. Add the shrimp, dry minced onion, salt, red pepper flakes and black pepper and cook 3-4 minutes. The shrimp will not be fully cooked at this point. Next add the lemon zest, lemon juice and chicken broth and cook until the shrimp are completely pink, about 3 minutes. Finally add the zucchini noodles and cook about 5 minutes or until they are cooked to your liking. Toss in the parmesan and serve.

Serves 2-3

Lemon Ginger Salmon

Wholesome and easy baked salmon is the perfect way to end the week!

Ingredients:

2 tsps sesame oil

1 tsp old fashioned grainy Dijon 

1 tsp lemon juice

2 tsps fresh grated ginger

1/4 tsp pepper

2 frozen salmon fillets 

sesame seeds and lemon to garnish

Mix the sesame oil, Dijon, lemon juice and ginger together and spread over each fillet. Sprinkle with pepper. Let them sit on the counter for 20-30 minutes. Then place on a parchment lined baking sheet and into a 450°F oven for 12-18 minutes, depending on the thickness of your fillets. They should flake easily with a fork when done.

Serves 2

Cauliflower Fried Rice

I was a little skeptical about cauliflower "rice" but was pleasantly surprised with this recipe. Even more surprised that my husband like it!

Ingredients:
1 1/2 cups cauliflower rice (found in frozen veg section of store)
4 cups frozen stir fry vegetables of your choice
2 tbsps sesame oil
1 tbsp dry minced onion
1 tsp garlic powder
1/2 tsp red pepper flakes
2 eggs
1/4 cup tamari or soya sauce
pepper to taste
Heat 1 tbsp of sesame oil to medium in a skillet. Add the cauliflower rice and vegetables. Stir until thawed then cover and cook until tender, about 5-6 minutes. Add the other tbsp of sesame oil with the minced onion, garlic powder and red pepper flakes and stir together. Push everything to the sides of the pan and pour the eggs into the well in the center. Scramble for 5-6 minutes then once the eggs are cooked stir everything together. Add pepper and tamari and serve.
Serves 4

Veggie Filled Air Fryer Meatloaf

Veggie filled for extra nutrition keeping the meatloaf nice and juicy. This recipe makes two smaller-than-loaf-pan sized meatloaves and air frying cuts the cooking time down considerably from traditional oven baked meatloaves.

Ingredients:

1 1/2 lbs ground beef

3 eggs

2 medium carrots, shredded

1 red onion, diced

2 celery stalks, diced

2 tbsps dried parsley

2 tsps garlic powder

1 tsp dried minced onion

1 tsp thyme

2 tsps worcestershire sauce

2 cups bread crumbs

1/4 cup parmesan

1/2 cup milk

salt and pepper to taste

 

Glaze:

1/2 cup ketchup

2 tbsps brown sugar

2 tbsps juice (pineapple, orange)

 

Combine the bread crumbs, parmesan, eggs, milk, salt and pepper together in a large bowl. Combine the beef, carrot, onion, celery, parsley, garlic, minced onion, worcestershire and thyme then add to the crumb mixture.

Using your hands, shape the mixture into 2 loaves that will fit your air fryer. I had to cook one at a time in mine. Place the loaf on a piece of foil and bring up the sides loosely. This is meant to catch the juices not to tightly wrap it. 

Preheat air fryer to 375°F for 2 minutes then lift the foil and loaf into the air fryer basket. You can bake a couple of potatoes too as long as you leave some air space between the spuds and meatloaf. Just wash and dry them, poke with a fork a few times then rub with oil and salt. Cook all at 375°F for 20 minutes, then mix the glaze ingredients together and brush over the meat. Bake another 5-7 minutes.

Remove the meatloaf and return the potatoes to the air fryer for another 10-15 minutes depending on the size of your potatoes. And that's about how long you should leave the meatloaf before slicing.

Mexican Sausage, Black Beans and Rice

Check out this one pot meal and use plant based sausages if you want to keep it vegetarian.

Ingredients:

1/2 lb Mexican or Italian sausage, sliced

1 onion, diced

2 tbsps olive oil

3 tsps minced garlic

1 bell pepper, diced

1 1/2 cups uncooked rice

4 cups chicken or vegetable broth

2 tsps ground cumin

1/2 tsp turmeric

1/4 tsp black pepper

pinch of red pepper flakes

2 tsps hot sauce

1/2 cup kernel corn

19 oz (540ml) can black beans, rinsed and drained

 

Heat the oil in a large skillet to medium. Add the onion and pepper and cook for 3-5 minutes then add the garlic for 30 seconds before adding the sausage slices. Brown the meat 5-6 minutes then add the rice. Stir and heat 1-2 minutes then pour in the broth. Add the seasonings, corn, black beans and hot sauce. Bring to a boil and scrape any brown bits off the bottom of the pan, then reduce heat to a simmer and cook uncovered for 15-20 minutes.

Finally, still  on low temp, cover for 10-15 until most of the liquid is absorbed.

Classic Date Nut Loaf

This retro favourite is dense and rich with lots of sweet dates and crunchy walnuts. Perfect for breakfast, snacking or dessert! And just one bowl! 

Ingredients:

2 cups roughly chopped dates

4 tbsps soft butter 

1 tsp baking soda

1/2 tsp salt

3/4 cup brown sugar

1 cup hot coffee (brewed or instant or replace with water)

1 egg

1 tsp vanilla

1/2 tsp baking powder

1 3/4 cups flour

1 cup chopped walnuts

 

First combine the dates, butter, baking soda, salt and brown sugar. Then add the hot coffee and let sit for 15 minutes. After 15 minutes add the egg, vanilla, baking powder and flour. Mix just until combined, no need for the mixer just mix by hand. Stir in the walnuts. 

Spray a 9 X 5" loaf pan with cooking oil then pour the batter in. Bake at 400°F for 35-45 minutes or until a cake tester comes out clean.

Cool 15 minutes in pan then turn out onto a rack to cool completely before slicing and slathering with butter!

Chicken Salad Sandwich Casserole

It may be ugly but it's pretty tasty! It's got all the flavours you love in a chicken salad sandwich but in a comfy casserole.

Ingredients:

3 cups  cooked rotisserie chicken, chopped 

1 cup mayonnaise

1/4 cup hot sauce

1 cup diced celery

1/2 cup diced red onion

1/2 cup diced red bell pepper

1/2 cup shredded cheddar

1/2 cup sour cream

1 tsp garlic powder

1 tsp dry minced onion

1/2 tsp black pepper

3 cups Caesar flavoured bread croutons

 

Grease a 10 X 10" baking dish.

Combine everything except the croutons and spoon into the prepared dish.

Layer the croutons on top,
and bake at 375°F for 22-25 minutes or until the top is golden and crispy.
Serves 4
