I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Chicken and Mushroom Bites

Mushrooms cooked to golden and well seasoned chicken in a buttery sauce. I like the common white button mushrooms but you can experiment using different types of mushrooms... maybe cremini or morels?

Ingredients:

 2 tbsps olive oil, divided

1 lb (500g) boneless chicken breast, cut in 1" pieces

salt and pepper to taste

1 tsp dry oregano

1 tsp dry basil

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

8 oz (227g) white mushrooms, sliced

1 tbsp balsamic vinegar

3 tbsps butter

1/4 cup diced onion

1 bell pepper, diced

3 tsps minced garlic

 

Heat 1 tbsp olive oil in a large skillet to medium high heat. Toss the chicken with salt and pepper and all the seasonings then add to the pan. sear and stir until cooked, about 5 minutes. Remove and keep warm.

Add 1 tbsp butter and 1 tbsp olive oil to the same pan and add the mushrooms cooking about 3 minutes or until golden. Add the balsamic, the rest of the butter, onion and bell pepper. Stir and cook for 3 minutes then add the minced garlic for 30 seconds.

Return the chicken to the pan, mix together and heat through for a couple of minutes.
Serves 4

Mushroom Gravy Meatloaf

This simple meat loaf uses lean ground beef and still manages to be juicy and tender. Serve with mashed potatoes for classic comfort food vibes!

Ingredients for Meat Loaf:

2 lbs lean ground beef

1/2 cup chopped red onion

1/2 cup bread crumbs

2 eggs

1 tbsp worcestershire sauce

1 tbsp Dijon mustard

2 tsps dried thyme

1 tbsps dried parsley

salt and pepper to taste

 

Glaze:

3 tbsps ketchup

1 tbsp balsamic vinegar

 

Mushroom Gravy:

4 oz mushrooms, sliced

1 1/2 tbsps butter

1 tsp garlic powder

1 tsp worcestershire sauce

salt and pepper to taste

1 cup beef broth

1 tbsp dry onion soup mix

2 tbsps flour

 

Mix the ingredients for the meat loaf together. Wet a 9 X 5" loaf pan and pack the mixture in, not jam packed but firmly, then turn it out onto a lined baking sheet. You get the loaf shape, but with lots of surface area to brown and glaze. Bake in a 375°F oven for 50 minutes.

Mix the ketchup and balsamic together. After 50 minutes brush the meat loaf all over with glaze and return to the oven for 20 minutes, glazing a couple of times.

While glazing the loaf make the mushroom gravy. Melt butter in a small saucepan or frying pan and add the sliced mushrooms and garlic powder, worcestershire sauce, salt and pepper. Cook until lightly browned. Mix the beef broth, dry onion soup mix and flour together and stir into the pan. Cook 3-4 minutes to thicken.

Let the meatloaf rest 5-10 minutes before slicing and serve with mushroom gravy. And mashed potatoes...you gotta have mashed potatoes!

Garlic Mushroom Chicken

This is the flavour bomb you didn't know you need! Tender pieces of seriously seasoned chicken tossed with mushrooms, onion and bell pepper. 

Ingredients:
2 tbsps vegetable oil
2 boneless/skinless chicken breasts, cut in 1" pieces
1/4 tsp salt
1/4 tsp pepper
1 tsp oregano
1 tsp basil
1/2 tsp onion powder
1 tsp smoked paprika
2 tsps worcestershire sauce (or soya sauce)
3 tsps minced garlic
8 oz (225g) white mushrooms, sliced
3 tbsps butter
1/2 small red onion, thinly sliced
1 bell pepper, diced
2 tbsps fresh parsley, chopped

Heat 1 tbsp vegetable oil in a large pan on medium high. Add the chicken, seasonings (except the garlic) and worcestershire sauce and give it a good sear then cook through, about 5 minutes. Remove from the pan and keep warm.
Heat another 1 tbsp vegetable oil in the same pan with 1 tbsp butter. Add the mushrooms and sauté 3-4 minutes or until golden. Add the rest of the butter along with the onion and bell pepper cooking for 3 minutes.
Add the minced garlic, stir together, then return the chicken back to the pan along with any accumulated juices. Stir and heat through about 3 minutes.
Plate and garnish with chopped parsley.
Serves 4
