I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Air Fryer Salmon Skewers

What an easy and flavourful salmon dish, enhanced with a delicious spicy and sweet mayo sauce!

Ingredients:

8 oz (200g) salmon filets

bell pepper

onion

lemon to serve

4 - 6" wooden skewers

 

Marinade:

1 tbsp lemon juice

1 tsp minced garlic

1/2 tsp dry thyme

salt and pepper to taste

1/2 tsp spicy chili oil

1 tbsp olive oil

 

Sauce:

1/4 cup mayonnaise

2 tbsps sweet chili sauce

1 tsp spicy chili oil

1 tbsp honey

 

Begin by mixing the marinade ingredients together. Cut the salmon into 1 - 1 1/2" cubes and the bell pepper and onion into squares about the same size as the salmon cubes. Toss the salmon and vegetables into the marinade and refrigerate for 30 minutes. Soak the wooden skewers in water at the same time. (Note: make sure the skewers fit your air fryer basket. If not they may just need to be cut to fit)

Mix the sauce ingredients together and set aside.

After marinating, thread the vegetables and salmon onto the skewers and preheat the air fryer to 350°F for 5 minutes. Discard the marinade. Then place the skewers into the basket in a single layer. Air fry for 6-8 minutes, flipping halfway through.

Serves 2 drizzled with sauce and a squeeze of lemon.

Grilled Zucchini and Shrimp Kebabs

Got more zucchini in the garden? Just thread them onto skewers along with shrimp, onions and pepper and grill 'em up!


Ingredients:
300 g (2/3 lb) medium to large shrimp
1 medium zucchini, sliced 3/4 - 1" thick in rounds or half-moons
1 onion, cut in 1 1/2" squares
1 bell pepper, cut in 1 1/2" squares
1 tsp lemon juice
4 tbsps worcestershire sauce
2 tbsps olive oil
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp lemon pepper
pinch of red pepper flakes
salt and pepper to taste

Fresh chopped chives and lemon juice to serve

Combine 1 tsp lemon juice, worcestershire sauce, olive oil, garlic powder, onion powder, lemon pepper, red pepper flakes, salt and pepper. Feed the shrimp and vegetables onto skewers then spoon the sauce over each one. Marinate for 20 minutes. Spray the barbecue with cooking oil, then heat to medium temperature. Grill 4-5 minutes per side, then plate topped with chopped chives and a squeeze of lemon juice.

Pork, Veggie and Watermelon Kebabs

Super easy summer staple ... kebabs. And totally customizable. Use your favourite veggies and you can swap out Italian salad dressing for whatever's in your fridge. Grilled watermelon takes on a smokey, sweet flavour that becomes surprisingly firm. Don't like watermelon? Grill up some pineapple or peaches instead!


Ingredients:
3 or 4 pork loin cutlets
Onion
Bell pepper
Watermelon
Zucchini
Mushrooms 
Italian salad dressing
First, soak wooden skewers in water for 15 or 20 minutes.

Cut the pork in squares and pour some salad dressing over the meat to marinate for about 1 hour in the fridge. These cutlets were about 1/2" thick so they cooked up quickly!

Slice the onion in half and pull layers of onion apart. Slice the pepper in squares and cut the zucchini in thick slices. Cut thick chunks of watermelon and the mushrooms can be left whole.
Feed everything onto the skewers then pour Italian dressing over it all.

Grill on a hot BBQ about 15 minutes then serve with rice.
Serves 3 or 4
