You could always use shredded potatoes, but since I got a spiralizer for Christmas I thought I'd give that a try.
2 cups spiralized potatoes (about 4 medium potatoes)
1 tbsp dried chives
1/4 cup flour
2 large eggs
1/4 tsp lemon zest
4 garlic cloves, minced
1/2 tsp salt
1/2 tsp pepper
vegetable oil for frying
Mix potatoes, chives, flour, eggs, lemon zest, garlic, salt and pepper together. Have your frying pan and vegetable oil on medium low heat. As you can see I didn't use alot of oil.
Carefully pour about 1/3 cup of potato mixture into the pan for each latke, pressing down lightly. Fry 1-2 minutes.
Flip and fry another 2 minutes until golden brown.
Remove to a rack on a paper towel lined baking sheet or serve right away with sour cream or applesauce.
Or try some Pulled Pork on top of your latkes.

Pina Colada Macaroons
Make these with a mini ice cream scoop for a
bite-sized gluten-free treat.
2 cups finely shredded coconut
1/2 cup sugar
2 egg whites
1/4 tsp rum or rum extract
4 tbsps chopped candied pineapple (plus more to garnish)
1/4 tsp lime zest
Whip the sugar and egg whites together then mix in the coconut.
If you want plain old macaroons stop here. But if you're going for the pina colada ones add the rest of the ingredients.
Use a small ice cream scoop and mound it onto a parchment lined cookie sheet.
We made half the recipe plain and half pina colada. Place a couple pieces of candied pineapple on top of the pina colada ones. Here's a shot of the plain ones.
Bake at 325 F for 15-17 mins.
And here are the pina colada ones.

Sour Cream Sugar Cookies
Sour Cream Sugar Cookies (from http://www.simplysogood.com )
Makes about 2 dozen cookies
1 cup butter, softened
1 cup sugar
2 eggs
½ teaspoon vanilla
½ teaspoon baking soda
½ teaspoon salt
1 teaspoons baking powder
½ cup sour cream
3 cups flour
In a large mixing bowl, cream together butter and sugar. Beat for about 3 minutes. Add eggs and vanilla. Beat for another 3 minutes. Sift together baking soda, salt, baking powder and flour. Add alternately with sour cream in three additions. Cover dough with plastic wrap and refrigerate overnight.
When ready to use, remove dough from refrigerator and divide into fourths. Roll dough to ¼-inch thickness. Using a cookie cutter, cut into desired shapes. The dough is very easy to handle. Bake in a preheated 375 degree oven for 8-10 minutes or until just barely beginning to brown around the edges.
Glaze:
1 cup icing sugar
1 tbsp. & 1 tsp. water
1/4 tsp vanilla
Mix together, glaze the cookies and let it set well. You will probably need to make a second batch of glaze to do all these cookie, but wait until you need it, don't double as the glaze will start to harden before you can use it all.

Then take some food colouring and add to small amounts of the glaze. If you use liquid colour you will have to add a little more icing sugar. Put some in a ziplok bag and cut a small hole in the corner. Decorate to your heart's content.

NOTE: Oops! I think I didn't let the white glaze set well enough before putting the coloured glaze on top. The cookies looked like this a couple of days after making them : (
