I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Garlic Crusted Roast Beef

The trick to achieving that ideal, juicy medium-rare roast beef ... invest in a good digital meat thermometer!



Ingredients:
1  1/4 lb European inside round roast beef
savory, thyme and lemon pepper to taste
1 tbsp olive
1-2 tbsps fresh minced garlic

Sprinkle the beef with savory, thyme and lemon pepper to your taste. I used a good 1  1/2 - 2 tsps of savory because I love it! Mix the olive oil and garlic together and rub into the meat. 

Leave on the kitchen counter 20-30 minutes.


Roast at 450 F for 10 minutes (you can throw in some quartered onions if you like).

Reduce heat to 300 F (don't forget this step or you'll have a little lump of charcoal where your roast used to be!) and return to the oven for 35-40 minutes or until internal temperature on your meat thermometer reaches 135 F 


Rest meat on counter 10 minutes before slicing. It will continue to cook a bit.



It's the perfect medium-rare - medium...nice and pink but not runny!
